I haven't played an MMO that had a strong background/underlying storyline since FFXI with its missions that really created a sense of playing a game with a purpose and true story unlike other games where its all about mindless grinding. Anyone have any suggestions for any good MMOs that have a good storyline and are FUN to play???

Bah, I gotta say this:
WoW has long story line with the Warcraft RTS games.
And there's coming LOTRO next year. It will be based on the books. Not movies.

Ryzom has a storyline??? Not when I played...
GW has the best storyline, by a longshot (3 storylines, counting the chapters seperately). In fact it's almost single-player-RPGesque in its cut scenes, PC centred story-progression, and coherent and connected quests and missions.
As for decent to play, I think that's a matter of personal preference. All of these games offer something to players.What is it that your looking for spefically in gameplay?

Ryzom has a great storyline actually, but I don't think it's what the OP wants. Let me explain.
I haven't played the Final Fantasy MMO, but if it is anything like the FF singleplayer games then the roleplaying aspect is very different from sandboxes games like EVE and Ryzom. Final Fantasy has always had a strong story, but little room freedom for the player. Ryzom gives max freedom for the player while the storyline takes the backseat. It doesn't mean it's not good (it's great) but unless there are more official events that lets the players affect the outcome (like EP 2) the storyline is almost invisible.
You seem to be a quester, Ryzom progresses with live events.

Guild Wars is the only one that really has a storyline as I usually think of it. Unfortunately, the story is pretty short, and once its over, the game has little continued playability for most people.
Anarchy Online has an excellent background story, and its always changing, moving forward with the players.

But many games have quite good backstory.
1:) it can actually happen
2:) the players influence it more then any other game ive seen or played.
3:) Normally i hate fanfare writings but the ones for EVE are usually pretty good.

If you are looking for a running storyline, then Guildwars is what you want. OK its not a true MMOG, but its story beats the heck out of others, even ryzom, eve, wow, etc.
As for Background, stories and general Info, Eve has about the most directly available stuff I have seen (ie. you don't have to go off the main site).
Chronicles : Small single page stories (currently at 93 chronicles)
Short Stories : 6 short stories and 2 novellas
Scientific Articles : Similar to short stories in length detailing the science of the Eve universe
Races : Some information on the 4 main races (use the left hand menu to navigate, also some small info on jove)
Organisations and Factions : Information on the NPC factions and corporations
Player Alliances : Information on the player alliances

WoW has extremely substantial instanced environments. In fact the major storyline elements such Kel'thuzad occur in raid instances. WoW could easily have virtually the same storytelling mechanisms as Guild Wars in addition to its outside instance questing mechanism. They simply choose not to.
It doesn't matter whether GW is a true MMO or not its mechanisms are certainly possible since many of these games make heavy use of instances. Further you could certainly have the cutscene mechanism in an open environment if you wanted, especially with the skip option.
