Unfortunately, the only "economic" games anymore are F2P games such as Runescape. All of the major titles have been transformed into item-centric monster-farming grindfests. If you do manage to find a decent game with a meaningful economy (that isn't riddled with eBayers and hacks) then please, let me know.
Everquest 2 got the most awesome economy ever, You can mine, Forest, fish, Gather, and Craft items with this challanging Crating system that allows you to craft the best item or the worst item as well. once you reach level 10 on your tradeskills, you can start getting a profession on the tradeskill from the multiple companys out there, once you pass that you can do work orders and rush orders that is like a job for you to start making money. It's beetter then world of warcraft cause world of warcraft just give you limitation and crappy items all the way.
Goonzu is a nice economic game as well but I get to confused and it's boring as well cause it just too simple craft and so forth (Simple craft is almost everywhere in multiple mmo games, which is too boring and make crafting not very bright and nefty).
I have yet to find a game with fishing as fun as in FFXI. Its economy was great too, last I remember. The thing is crafting, fishing, mining, etc is complicated, in that the game doesn't really tell you what to do. You have to read forums/ask people in order to learn how to do that stuff. Also everything is kinda woven together, therefore its harder to do all the things you want without gaining some levels too.
Also FFXI is a beautiful game for its age, if you don't mind the fact that there are limited character models.

good economy - Played dozens for mmorpg's none of them ever have a good economy. Hacks, dupes, ebayers...something always screws in game economics. In the end Mudflation gets all of them if nothing else does.
try star sonata, its a space themed MMORPG and it has a really advanced economy, and since its small there is very little polution in the economy (item sellers, hackers, etc). Its great
EvE online has a really good economy if you join a corp who knows what they are doing but to really make the most out of the economy you really need to have a fairly large amount of gametime and if you want to make vast quantaties of money you really need to be in 0.0 space (all would become clear if you played the game =P) which is definatelly not for new players.
SWG Pre-CU used to have a great economy...it was 100% player ran and made...it was the best until $OE killed it with the NGE (only 5 year olds play NGE)

I find it amazing that by 2020 first world countries will be competing to get immigrants.
