I hate to use this but Classic swg had it best. Where else could you be a bio-engineer and creature handler.....or a shipwright/swordsman. The ability to mix and match is what is now missing in today's games. Now, it seems IMHO that you have about 7-10 generic classes to pick from from (insert any game today--here).
I liked the Asheron's Call system, could mix and match any of the available 'classes' they had, made for an interesting setup. A lot like the sandbox method but with limited moulds.

UO and AC 1 skill systems just cause it makes game play more even and focused on the player and not the developer.
