Try Last Chaos maybe, not sure if thats what your looking for as far as creature taming.. But you can raise a dragon or horse, and train it as it levels.
Well in Ultima Online you can tame hundreds of different animals, from dragons to beetles to horses to lama's to rabbits. They all have stats & skills and if you train them up to cap they will be just about twice as strong. It is not the focus of the game by any means, but i have allways liked the way the game had and handled taming.

Ultima Online, has the best pet and raising I have ever seen. Graphics are a little old at the moment but are going to be upgraded shortly with KR (Kingdom Reborn)
Ultima Online has this. You can tame basically any creature in the game. When you get high in skills, you can even tame a Dragon. You can tame sheeps, birds, dogs, cats, deer, basically anything. Give it a try, it is really worth it.

Rappelz also has a creature aspect to it. Three of the nine classes are primarily focused on pets. Then again, there's not a huge level of variety to the kind of pets you can pick. I believe there are a total of nine, and only three of them are really attainable by a new player.
Eudemons Online is pet-focused to an even greater degree, I believe. I'm not sure if you can get a pet without buying it at their item mall, though. You'd have to check that out.
