Its a tose up between orc and night elf for me. and coem down to their racials.
Orc has a passive racial that increases pet damage by 5%, they also have an active racial that increase there DPS by a % (based on level) for 15 seconds (but does reduce healing while active). So as an Orc you get more DPS as a hunter.
Nightelf have an active racial called shadowmeld that is a stealth ability (you cannot move else you break stealth) get a stealth pet such as a cat and you can lie in wait to ambush a player, great for world PvP.
Shadowmeld also reduces your agro range so in a tight corner and some mobs on patrol hit Shadowmeld and they'll walk right by. So as a Nelf your better at sneak attacks and hiding.
I'd suggest tauren for the +5% health and AoE stun. But ultimately every race has good enough racials for a hunter, so just pick the one wich you like most.
The faction you play is far more significant than your choice of race. First pick horde or alliance. Then decide on race.
When deciding, ignore racial stat bonuses (they are incosequential at medium and high level) and look at the racial abilities instead.
Any of the following should be fine for a hunter: I've attempted to list the bonuses that I believe are most significant for hunter play.
Alliance:
Night elf - shadowmeld, dodge bonus
Draenei - Heroic presence, shadow resistance
Dward - 5% gun skill bonus, stoneform
Probably not best for a hunter, but you still viable:
Human - reputation bonus, spirit bonus (the spirit bonus is probably better for priests or paladins).
Horde:
Orc - 5% pet bonus, stun resistance
Troll - health regen, 5% bonus with thrown weapons and bows
Tauren - health bonus, warstomp (only play a tauren for PvP, these abilities are largely useless to a PvE hunter)
Probably not best for a hunter, but still viable:
Blood elf - Silence ability, magic resistances (although the silence only works close up and hunters normally prefer to be at range).
Personally I chose night elf, but only because I hadn't played a Nelf before and wanted to see their starting area. I've grown to quite like the shadowmeld ability.

Find treasure..... identifies chests etc on minimap
Stoneform..... cures poisons, diseases etc... very handy!!

Seriously though, dont base your choice on racials. Looks are more important, I too like Shadowmeld but play a nelf? NEVER!!
