1.)Gemstone III, which is currently Gemstone IV, by Simutronics. It's a text-based mmorpg, my first when I was 16 due to dialup, and it was simply amazing. I haven't been as immersed in any game as I was to that one.
2.) World of Warcraft... sure to incite a riot, but I'm not debating this, it's just my answer.
Anticipated: Age of Conan is really looking like my next game choice, due to graphics and everything I have read. I've never been a huge Conan fan, but from what I've seen they are going to put out a polished project.
Most Disappointing?: EQ2, LoTR (Simply due to the lack of magic users and I understand the reasons), & FFXI.
Thanks for the question though, it was a good one.
I wish I had been around for the halcyon days of EQ, as I think I would have loved that. Sadly, I was late in getting to the MMORPG scene (or early, depending on how you look at it), and to me, I have never felt the level of immersion in a game that I would expect. It's strange that to date, the genre does not seem to have ensnared my interest to the same degree which single player RPG's have (such as Baldur's Gate II).
At the moment, the closest MMO environment to capture my imagination has been EQ2. If the quests were not of a set type, and more involving (rather than just a formula, with you basically accepting or refusing), then I would be in rpg Heaven. Also WoW, on the rp-specific, Moonglade server.
I've been terribly disappointed by titles such as D&D Online, but am still hopeful that there will be that 'must have' game in the near future. Until then, I shall make do with EQ2 and WoW.
hmmm ... well first let me state what ive played ...
matrix online, -- everquest 2, -- star wars galaxies, -- city of heros, -- city of villains, -- phantasy star online, -- maple story, -- dungeon runners, -- neocron, -- planetside, --
anyway you get the picture ive played a few....
hmm most immersive ... hmm ... i'd say
phantasy star online, star wars galaxies ( pre cu and CU ), and everquest 2
thats NOT saying i didnt have fun with the others ...
Phantasy Star Online for the dreamcast - first mmmorpg experience, omg I can actually play with people from all over? So what if it was the same 4 levels of grinding, was a new experience for me.
Ragnarok online alpha-last beta
Dark Age of Camelot - Just a fun game for me.
Star Wars Galaxies pre cu - i still cry over this game, all the fun I had and even the not so fun time grinding for my jedi, I would DIE for classic servers to be opened up for this game.

-blue I played Gemstone III and loved it and am playing WoW now and loving it. To me its the little things that add to immersion. In Gemstone people would sit around in the town center and occasionally a squirrel would drop an acorn of someone head. I love little stuff like that. WoW has a lot of small stuff even after 2 years I'm still surprised at stuff. What ironic I quess is that Gemstone and WoW are on the opposite ends of the spectrum as far as difficultity wise.
Definately pre-cu SWG. Player cities were great, the noob wars between AH and bestine, you could decide what you wanted to do. All you had was a very short linear tutorial and you were off in the world doing what you wanted to do. The crafting system is amazing, I loved the player driven economy, class diversity, class interdependency and creature handler(Not to be confused to beast master).
