i belive this is just a more organic form of the what race topics that have been posted previously. however its a good question none the less.
i for one have learned my lesson from wow, and no im not referencing to wow it just is extreamly relevant to what i have to say. on wow it seemed that horde was more mature and alliance was more immature, which is not 100% true there were some deviations to the rule but for the masses it was either cool i wana be horde (15-40+) or you were alliance (8-14) and you were like omg those horde guys are ugly night elf for me. with the release of TBC that rule changed, BElfs were the new Nelfs and well you got just as much immaturity on both sides.

I'm going to be playing both sides, Order on one server, Destruction on another.
And roll up as many classes as I possibly can on each (Non-recovered alt-aholic here
)
Current polling trands always lean heavily to the Destruction side. Dwarfs and the Empire are cool, but Greenskins and Chaos are just badass.
Once average gamers (gamers that don't watch games in development) are added to the mix, though, it should even out. A lot of people like being the good guys, even when the good guys are flawed.

My first intention is to play an Orc Choppa but I am drawn to the Dwarves as well, and who knows what the elves may have so I'm not sure yet. A warpriest would be fun too, im torn!

There was a gaming survey that was performed and it turned out younger people tended towards Horde (12-17) and the older folks played Alliance. They also found that women tend to play elves and healers.
So, your theory seems a bit off compared to that. You can see the stuff they came up with:

I think that most people who follow the early development of games will err towards the darker or evil side of this game. On that note I would have enjoyed if they had gone for a mature rating or at least not worried about not fitting into the Teen rating I think that could have resulted in some very interesting results in terms of character design for Destruction & Order.
Concerning the poll as it stands I am leaning towards Order. The Empire and a Warrior-Priest though who knows how things will turn out I do want to play a Greenskin at sometime in the future. Its hard to say anything with any certainty at this time though.

I like the imbalance towards destruction, it sort of fits with the whole Warhammer lore concept - the world being on the brink of destruction
. With the Dogs of War making up the numbers, the imbalance shouldn't be game breaking I think. Odds are that on release, most people will be going for the destruction side, but as Areel and others mention, it should even out after everyone settles in to become altaholics.
But yep - more destruction players will keep it interesting for the Order players. I really want to fight Chaos, so I'll probably roll Empire first, but also because I am really familiar with the Empire side of things and I'm really looking forward to running around Altdorf and Middenheim (If they include that city). A knight of the burning sun looks appealing, especially if they go ahead with mounted combat, like Paul Barnett hinted at in an interview when he said they "fight pretty high off the ground". I'm just imagining the full armoured knightly charge into the tides of chaos now.... I can't wait.
Many of us come from DAoC. And before that a portion came from UO. We have learned through trial and error its better to play the underdog than to play the favored. I had tons of fun being an outsider in UO and a Mid in daoc. All you need is to hook up with a few good players and playing against superior numbers you will always have fun running into the underskilled players on the other side.
My guild is chosing destruction because they want to be underdog. I myself so far only like 2 classes in the game thus far. Warriorpriest is by a long shot my favorite and brightmage would make a good alt. I hated the runepriest (found it very unrewarding and a 1 trick pony) and wasnt overly impressed with the lack of pure healing power the shaman had. If EAmythic comes out with a way to ballance population which I know they will, I will want to play Order. If not, I will join a low population server and play underdog.
