What are the houses like in UO? How much freedom is there? Could you create a castle or at least a stone house? Also, are the houses instanced or non-instanced?

You have A LOT of freedom when building your house. All you have to do is find a free area, place a house slot there and start building. You can buld anything, anywhere (almost) on that house slot. From windows, doors, steps, walls (wooden, stone...), even floors. One, two, maybe three? Your choice. You can even buy a furniture that suits you/your house the most and place it anywhere in your house. So, a lot of freedom when you're building. But it depends how much money do you have - if you're rich, you'll have no problem building yourself a castle. Otherwise, you'll have to do it with a small hut.
And no, houses are not instanced, everyone can see 'em, visit 'em, even enter, if you allow 'em to. You can place vendors in your house to sell stuff for you and so on... So, it's quite a nice thing, but it's not that good anymore. You have too much of space-like houses and strange-colored vendors these days. I preffered old-style UO where houses were realistic and vendors were... well, people-like.

Yeah, you can make pretty much what ever you want when it comes to houses in UO.
