The ore sells pretty well. Actually I recommend people take up Exploration as there craft if they just plan on being a collector. Its a easy job and it pays ok. I personally am a Scholar though and make my own potions.
You choose a proffession, and it has three crafts bundled in. For example a Historian gets Scholar (makes potions and dyes mainly), weaponsmith, and farmer (yes, farmer). Many of the proffesions have production crafts for whihc they lack a key gethering or processing skill. This is intended to drive the economy and promote interdependance among proffessions. In practice, however, it means that raw resources sell for a crapload on the AH and most players only level one or two of the crafts that they get when they choose a proffesion.
Also, I concurr, Exploere is a very safe choice for a first proffession. The armor you can make is pretty nice if you wear cloth or leather (even at level 28 I still wear a lot of stuff I crafted), and you will make a crapload of money selling ore.

If you just wanna make money..best vocation is explorer then you can gather ores, hides and wood and sell it on the AH. An interesting vocation is farming which allows you grow your own food and cook your own food... food in LOTRO gives stats and increase morale and/or will regen.
