Currently i can only assign shortcut keys to the first 3 hotbars.....
Is there a way to assign shortcut keys to my other 3 hotbars?

If I am understanding you correctly, and you want a hotkey for position 4 on hotbar 7 -- I am pretty sure that you cannot do that.
but...
If your not using that many hotbars at the same time...
You can reassign the hotbar from hotbar #4 to hotbar #1 and use the shortcut keys...
I do this for crafting. My crafting hotbar is #8 normally. Then when I craft, I rotate it up and make it hotbar #1.
However, if you have all them active, say your a monk type and just have that many buttons... then... not that I know of, you need good mouse action

I was hoping to use 6 hotbars at the same time, most of them abbilities, some of them emotes.
I don't use the hotbars to click on but want them all hotkeyed to my keyboard
