Think you should give, LOTRO or COX a try - Both got a free trial too.
Edit; COX got some pvp zones, which you can ignore if you want

Hate to say it but your asking for WoW quite well.
WoW babies its players by giving those who don't play much rested XP so when u log back in u get double XP till thats used up , but u can get more just staying logged out for a day or longer. Tons of upgrades and hunting for items, sadly the crafting sucks till you near the cap and start dealing in $3000+ gold recipies.
.........and of course you can solo the entire game with any class very easily in no time at all. In fact in the next update Blizzard is making lvls 1-60 even easier to obtain, either by more xp per kill or quest or less xp per lvl required! Seems they've got fed up with these lvls and want everyone lvl 60+ so they can focus on raid instances and end-game only.
Don't play on a PVP server, and that won't happen ever!

Whats CoX stand for? any chance of a link please
ANd I have played warcraft before, but didnt like the durations required raiding. Played alot in Naxx pre TBC. All was deemed pointless after the patch, was one of the main reasons I left.

Guild wars may fit into what you are looking for too. max level is 20, only get killed if you choose to go to pvp, items seem to drop often or atleast to me they do.
Hate to say it, but if you haven't played WoW, thats a good start.
I know a lot of people give WoW a hard time for one reason or another, but if your a casual gamer it could be exactly what your looking for.
And you won't get PK'd

I was thinking the same thing. Guild Wars can be played as a co-op with other people (or NPC henchmen) or player vs. player - it's up to you. The other nice thing about Guild Wars is no monthly fee.
................................
My current Guild Wars character:
Dauthix The Avenger (Paragon/Ranger)
I suggest Guild Wars
Let's address your situation one by one:
*Can't play much
If you play Guild Wars, you only need to pay for the game once and don't need to pay monthly fees.
*Like upgrades, hunting for items and crafting systems.
Although not as complex as WoW, to get armors in Guild Wars, you need to collect items and craft them on NPC.
*Would like to be able to achieve something without having to spend months infront of the pc screen
Again, Guild Wars fits this perfectly. You don't need to use too much time to be able to achieve something in GW.
*Do not like being killed / pked.
In Guild Wars, there's no open PvP, so you'll be save from random PKers.
yeah, i say CoX would be a good game for you. it's really a blast to play, just not very deep which makes it a great casual game.

The OP just described Tabula Rasa to a "T." Try that when it comes out. It's everything you asked for without exception.
I agree that LOTRO and COX would be good options. WoW, I hate to say could also be an option so long as you are fine that you will NOT go to upper instance dungeons and get all the shiney loot that the Fan bois cry on the boards about. There is plenty for a solo player in WoW.
