I've played on Zul'Jin server - which is PvE. It was one of the first, so it has a large number of veterans and a very healthy economy (which helps when you're starting out so people will quickly buy your stuff for decent prices to get your gold supply going.) At lower levels, you'll likely be playing with people on their alts. I haven't played much on PvP servers, but if PvP is your thing, that's where you probably should go.
Well, assuming you are in a US timezone, if you want a good, old-school (been around since launch) PVP server, consider starting on Kel'Thuzad.... still has a strong population of players and plenty of action both PVP and PVE.
All classes at end game (we're talking about the raiding end game right?) are very useful, so don't worry so much about that. Pallys are a forgiving class, however you don't do a lot of damage so solo leveling at the top can be sort of painful.
Play the class that seems most fun to you.... they all offer something different..... (although, there's usually too many Hunters and Rogues on most servers)
Most important advice I would give a new player, be sure to chose two gathering skills starting out... like mining and herbalism...and sell everything you can...that will keep you funded initially as most crafting actually is a money sink that won't help you get started.

I suggest the Aerie Peak server, I just came back to WOW and rerolled there... lot's of low level people everywhere, great for new players. I don't recommend a PvP realm. You can PvP all you want on a PvE realm without getting ganked by some tard who has no self esteem in real life and takes it out on people in a video game.
As for what class to play, try them all out a little bit and see what fits your style. Maybe this will help:

if you want a halfway decent community then stay away from the pvp servers. you can still pvp on the pve servers, just not in the open.
I agree in that Aerie Peak is a very good non-pvp starting server... I was there for months before changing to Black Dragonflight a pvp server.
Hiya
I can tell you Wow is a nice game :-)

Why playing on a new server you said ?
First, you have a chance to play with a comunity that are around your exp and not teling you all time "you a fuc,, newb" and ignore you.
You can try to farm items more easylly and you re not use to fight a end-game toon to have it.
the only probleme you can have with a baby server is "its my probleme atm" when you reach the end lvl, ( 70 atm ) its not that easy to find a decent guild or team to run endgame content like Karazhan , Black temple.
take care
Be careful, most .. and I do mean MOST .. pallies during end game are HEALERS. They pretty much put Priests to shame in raids. So ... if you wanna play pally, thats fine and dandy .. but realize what you're going to do if you ever start to raid ... and that's press .. 1 .. button for 4 hours.
The vast majority of non raiding pallies are of course Ret, for farming and what not .. but for PVP they are a joke compared to any equally geared players of other classes. Don't even pay attention to pro-Ret people ... if they exist .. they are just to ignorant they are getting boned by blizzard up the ass every patch ....
I would first play on a PvE server to get your sea legs. Once you gain some experience playing a PvP server is a fun option.

Torren: Warhammer Online (Praag)
I play on Ysera (PVE) (US). Great server, plenty of lower levels still. Qutie a few end game raiding guilds as well.
I really don't see the point in joining a PvP server if you're looking for the end-game stuff (in other words PvE instance raiding). Playing on a PvP server will only slow you down, corpse camping being the biggest speedbump (some areas in the game can be a nightmare if you bump into enemy players who find killing someone 30 levels lower than them ten times over funny). I suggest you get yourself a leveling guide like Brian Kopp's (Alliance) or Joana's (Horde), they're of great help as they make the most out of quests (especially quest chains), and lets you skip the downtime you would normally have if you don't know what to do next in the game. And you can always PvP in the battlegrounds if you want to - that's where you get most kills too.
Id be a shadow priest , cuz they are the best dpsers in the game and they help your groupmates while doing it.

This post is on the money - if you are looking at end game - steer clear of rogue and hunter. IF you like healing oddly - steer clear of priest - recommendation for healing - druid or pally (druid will probably be more fun as they shapeshift and stuff).
Gathering - herb/skinnning or herb/mining OR herbalism/alchemy even.

Edit: oh yea - if you are a fan of PVP start there - it's harder to level though as people can kill you at will. If you like PvE better DEFINATLY start on a pve. One warning - you can transfer pvp to anything but, can only transfer pve to pve.
Start on a pvp server. If you decide you can't cut it, you can always transfer to pve later (at a charge). However you can't transfer the other way round.
