good question .. i find myself in the same boat today.
you can mine and sell ore
you can mine, refine the ore, sell the minerals
do more agent missions (security missions if you have a combat setup - others if not)
kill npc
buy and sell anything in game
join up with other players and do what they are doing
look for a corp to join
look up missions and complete them
look up escrow demands and complete them
listen to eve-radio and see if they are up to something
explore
search various regions for good buys
pirate
steal stuff from people
help people kill poeple who stole stuff from them
of them i would suggest joining a corp as a place to start .. as the people you join will make all the above more readily possible and heck of alot more fun.
Aquiring blueprints for commonly used items like turrets, missiles, ammo and them building them is also quite fulfilling. start with the small versions and work you way up to the large.

Listen to Zipeh, he knows what he's talking about. Join a corp, if it's good that's all you need to do, they'll help you completely from there. If they're bad join another corp

well it all matters what most interests you. if you want to get started easily, then join a corp, thats what i did and it helped me alot. if you want to be solo, i remomend doing missions until you get a cruiser or higher and then start mining. because if you dont have anyone helping you when you have a frigate and/or an industrial it will take a while to get a little.

I have tried several of the above suggestions in the past few days and can say I have found each of them fun and enjoyable in thier own way.
I personally however, tend more toward the buying and selling aspects of the game.
