Well i can tell you, every single MMO for the most part, will have some sort of " go collect this and that and bring it back " quests. They are time fillers, content fillers, they fill the gaps in the void. It sucks but thats how it is. Honestly, FFXI to me had amazing lore, but it takes a hardcore player to usually experience it, it is definitly not for everyone. Inn terms of lush enviorments and settings, EQII had some amazing looking areas to quest through, all very "alive" and interesting, you really felt immersed in my opinion.
In terms of PVP, i cannot really help you there, for i dont go to MMO's for just the PVP, but im sure you have heard of the upcoming warhammer and age of conan MMO's. Since those two are getting intense hype, maybe want to check and see if they fit your criteria for PVP and game mechanics.
I hope this helps you out a little. If you want you can always jump on the bandwagon and try WoW, if you havent already. Good luck friend.

Thee is a reason why F2P games, are F2P. And its nothing usually positive, my friend.
What about a P2P game?
Hmm, well what classifies as rich content and lore to you?
Non-boring quests that make me just go grind/collect
A good story line. Preferably a medieval/fantasy setting
Hmmm...Interesting.
