How does it work? I hear the economy plays a huge part in the game and is totally controlled by the players so how exactly does it work? do players NEED aguild to progress in the economy? Is there just one elitist guild ruling over the economy?

Last time I checked, the economy on my server (Rackham) was pretty much dead.
Societies produce everything in-house if they can. And market demand has dried up as well. Not a good time to play the economy, I fear.
The economy is one of the strongest & best features of Potbs.
You can participate solo by setting up some mines or quarries & make goof profit by selling basic goods on the auction houses.
You can also produce complete small ships solo, the larger ships or Sols (ships of line) generally require a combined effort of a guild or society to build.
It is still possible to enjoy the economy as a solo free-trader simply by buying cheap & shipping your goods across the Caribbean to another port where demand is high for good profits.

Yeah I certainly haven't noticed anything broken about the economy; it seems to work pretty much how you'd expect. I quite enjoy playing economically, as it were - and spend most of my time working alone.
Whether it can be done solo or as part of a society depends a lot on what you're making. I make ammo, and can make most of it alone and have made a reasonable sum doing so. However, sometimes I team up with a guildmate who has a supply of copper and zinc - something that would've been very expensive for me to get into - and can start turning out bronze shot, which sells for a much higher margin.
When you start talking about making complicated things like ships then doing so without a society behind you would be very difficult.
It remains to be seen if there's much inflation once automatic ship insurance comes in, but I feel that's really a risk worth taking if it helps even up the risk/reward factor of PvP.
