I don't really have any good suggestions for you, because you are looking for something that isn't going to be easy to find. You can never guarantee a whole server having a good economy, let alone a whole game. Economies in games are ever-changing (even on a daily basis) and it's the players that create or destroy this economy.

What you want is a hybrid between the SWG crafting system and the CoX consignment house. Sadly, that does not exist...to my knowledge anyway.
