You can begin crafting at level 5, after you have completed the initial quest(s) for whichever profession you want to learn (e.g. blacksmith, jeweler, tailor, pharmacy). The initial quest is quite simple, you'll need to collect items and hand them in to the respective "teacher." Once that is done, you will be rewarded with the craft skill book which you can then proceed to the elder of your starting town and learn. After that is taken care of, you can begin to craft level 1 items. Once you have crafted enough items to progress to the next phase, you can return to the elder and learn the next level of your skill(s).
Although crafting is an important part of the game, it is not compulsory. The downside of crafting is that you'll spend a lot of time and money acquiring the items you need for crafting, but it goes without saying that the best EQ in the game are the ones crafted by players.

Yes, they are in game and you can craft them.
