You can start PVP right off the bat. Just go to the channelers in the main city and ask them to port you to the battlegrounds. It automatically picks the one right for your level and throws you in there to fight the other realms. Some BG's are less popular then others so you might have to level by killing mobs to get to the next one, otherwise killing people is a relatively faster and more fun way of leveling, if you ask me.
Class wise... I'd say play what you think you'd like. They are all relatively easy to use, it just takes you a bit of time to really master the nuances and the little tricks of the trade. Just go and have fun, if you don't like what you've picked try something else.

it depens when you want to level, lvl 1-5 you will mainly just have auto attack lol, imo level up n try n get some quest stuff till about lvl 10 then go cos then you will have enough abilities to give people a problem, also i would reccomend a classic server such as lamorak since its easier end game imo.

The long list includes all classes now days except a fully healing specced Healer, Druid, or Cleric as those are fairly unfun to try to level as a newb unless someone is PLing you.

I posted this elsewhere, but here's my short and long list of classes to level as a newb (with recommended specs):
Vampiir (any spec but shadow mastery is EZmode), Friar (staff & enhance), Bonedancer (bone army), Necromancer (deathsight), Shaman (specced cave), Druid (specced nature), wizard (fire), enchanter (mana), Eldritch (void), ranger (or scout or hunter specced full archery rest, whatever), runemaster (runecarving).
