Antonia Bayle is the most populated, and there are several well populated servers. I believe the least populated would be Mistmoore and Befallen(?) and probably the European servers. Don't quote me on that as I'm on Butcherblock, and we're well populated, and that's the only server I know well.
Fun depends on what you like. In the eyes of the beholder, so to speak. If you like tanking and taking the punishment and leading groups, the guardian and berserker are good choices. If you like tanking and having utility like healing and spells, then paladin and shadowknight. If you like tanking and like fistacuffs, then go monk and bruiser.
The scouts put out dps, except for bards that buff for dps. They indirectly dps by raising everyone else's dps. The ranger and assassin are pure dps. They're there for the numbers, kill it, and kill it fast. Swashbuckler and brigand dps, but also bring debuffs in to slow down, or make the mob easier to hit.
The mages all dps. Wizards and warlocks are pure dps like the predators only with spells. The coercers and illusionists debuff and buff while dps'ing. The conjurors and necromancers depend on pets to help them dps.
And of course, healers heal. Templars and inquisitors have the lowest damage output, but they heal with reactives. In other words, they buff you with a heal, and it starts healing when you get hit. Defilers and mystics have ok damage output, but they ward. Wards heal you before you get hit. It's like having extra hit points that the mob has to go through before damaging you. Then the wardens and furies heal with hots, where the heals heal so many points over time, a little at a time. But they do the most damage. Some damage spec'd druids can do mage type damage with the right equipment.
As far as easy to play and survivability, go with swashbuckler, brigand, monk, bruiser, conjuror, necro, fury, and paladin. As far as needed for raiding, go with dirges, troubadors, defilers, mystics, wizards, assassins, illusionists, coercers, and guardian. Some, like coercer and bards are going to be a little tough going at first, but once you get it down, they're pretty good.
The best soloers in the game are conjurors, necros, wizards, warlocks, monks, bruisers, and furies. There are some coercers that are absolutely devastating, but they are VERY good players.

population on english uk servers is quite ok, its not like antonia bayle. but if you play european times then they are probably a good choice, but they can be a bit lonely outside standard eu playtimes, so if you are not from europe or play strange times cause of jobs then i would not fully recommend them.
You should check out this podcast over at Virgin Worlds. Its a podcast on EQ2 that is based on information that covers lost of stuff a new or returning player might be intereted in.
Stay off the EU servers, the lagg a lot more than the US servers... When me and some friends bought it we almost quited until I tried one of the US servers, we all moved there after and never looked back. Dunno why the EU servers sucks so bad, I heard it is the same thing in Vanguard.
I reccomend the US server Lucan D'lere. And if any of you guys don't believe me, make a char there (You can have max out your character numbers on EU and still make as many extra on US) and try a walk in Neriak, the laggiest place in the game. On Lucan... No lagg.
Also I played on a few other servers, Lucan got the nicest players of any I seen
