Yes it's open ended nature and freedom to do what you want when you want. Second to that the player interaction and consequences. Players make and run the universe in EVE and not the dev's with their crappy stories and npc puppets unlike in other MMO's.

Because there is no attempt by CCP to impose a moral framework on people, I think you see people acting more like their true selves, good or bad.
Eve is a human nature laboratory first, and a make-believe internet spaceship game second.
