Since, you are starting new I recommend that when you get a subjob you sub Warrior. You will need to level warrior up also in order for it to be an effective subjob. A subjob level is half the main jobs level at all times. So at lvl 75 your subjob level will be no greater than 37.
As a thief, for levels 1-32, only use daggers to keep your dagger skill topped off for the current level. Then switch back to using swords. You will be using swords mainly from lvls 1-32 due to the increased damage output they do compared to daggers. After 32 is when you really start to shine, because if you kept your daggers topped you will gain Viper Bite your first powerful dagger weaponskill.
Also, when playing a thief expect to be the puller for the party. You will also have to learn how to control hate levels on the tank by using Weaponskill, Sneak Attack, and Trick Attack.
Once you reach 30, you will want to get the Ninja Job unlocked. You will probably be able to find a lvl 75 that can help you unlock it rather easily.
Ninja is one of the best subjobs for thiefs along with Warrior. However, be warned leveling a Ninja is expensive due to the Ninja tools and the spells Utusumi Ichi and Utusumi Ni. Ichi is rather easy to get through a quest line that is done in the same area that you can unlock the Ninja job sort of (Need high level to help you). On the other hand Utusumi Ni is expensive due to be only being obtainable through BCNMs and such.
On a completely different note, do not throw away any Beastman Seals or Kindred Seals, because they are used to fight boss battles in BCNMs and KSNMs.
Eventually, I imagine you will want to unlock all possible jobs. Last time I played which was about 2 years ago, I easily had all of them unlocked within the first year of playing, but since then 2 new expansions came out after I quit and I am just now starting to get back into it. So, I will have to unlock the Scholar, Puppet, Dancer, Corsair, Bluemage.
Note: I have been playing since the initial English release for the PC back in 2004. Even though I never did endgame stuff I knew a lot about the middle game, crafting, chocobo digging, fishing, fame quests, mid to some upper end NM hunting and such.
I have been catching up on all that I have missed from 2 years ago and boy its a bunch with the Chocobo raising and all the new stuff in the expansions and updates. Just recently they announced that the next patch will contain more stuff for Lower Levels.
Trust me, the game isn't all about leveling. There are tons of other things to do compared to most current MMOs where it is all about leveling and endgame raiding.

Level Thief to 18. That's when you can do the subjob quest. Once you finish that quest start leveling warrior to at least 9. Try to always keep your subjob at 1/2 the level(or more) of your main job.
BTW thief is definately one of the most fun jobs in the game. Once you hit 15 is when the job really starts. That's when you get sneak attack. Before 15...thf is horrible lol. But that's ok^^

Hey there and welcome to FFXI. Glad you're enjoying it!
In answer to your question, you'll need to have a job to at least level 18 before you can unlock your subjob ability. So, take Thief to at least level 18 and then get that quest completed.
Since you'll probably be leveling in the area where the quest items drop, you can collect them before you even take the quest.
The items to look out for if you start the quest in Selbina will be a Damselfly Worm, a Crab Apron and a Magicked Skull. All three drop off mobs in the Valkurm Dunes.
If you start the quest in Mhaura, you'll be looking for Dhalmel Saliva, a Rarab Tail and a Bloody Robe. All three items drop off mobs in Buburimu Peninsula.
Chances are, though, you'll be doing it out of Selbina and will be in Valkurm Dunes; it's the "default" place most people do it from.
So, if you're in a party and any of those items drop, ask if you can roll on it, or if it can be passed to you if no one else needs it. It'll save you time when you're ready to start the quest.
For now just worry about getting to 18. Can always ask for a refresher when the time comes, and I'm sure others in game will be happy to help you as well.
Now.. that said...
When you do get your subjob unlocked, you can do one of two things:
1. Return to your starting city and get yourself set up with your main/subjob combo. Going on the previous poster's advice (which is good advice)... Go ahead and talk to your moogle to make your main job Warrior and your subjob Thief. Then start working on leveling Warrior.
2. Continue on to level 20 and then go to Jeuno to get your Chocobo license - to get it over with. Then go back and proceed with #1.
In the event that the whole job/subjob thing is a bit obtuse to you right now - don't worry.. it is to many people, and it's one of those things that's harder to explain than it is to understand.
It will make sense as soon as you see it at work.
When you first start working on Warrior, you'll be Warrior 1 / Thief 1. Even though your Thief's actual level is 18 (or 20, depending on what you do), it's capped at 1, and will be until you get Warrior to level 4. Then you'll notice your Thief sub is level 2, since 2 is half of 4... Then you'll go to Warrior 6 / Thief 3.. and so on.
You'll notice as you level up that the abilities for your subjob become available at their appropriate level as well.. The same goes for the passives for that job. This is where the "flavor" of the job/subjob comes into play and is why - in my opinion - the job/subjob system is one of the highlights of FFXI. Depending on what subjob you choose, it'll put a different twist on how you play your main job.
So yeah, just take it as it comes, learn all you can.. ask questions and have fun!

Until you have Viper Bite Weapon skill, use sword with your Sneak Attack. Due the Dagger's first few skill before Viper Bite just doesn't cut it with Sneak Attack. HtH is fine too, but Sword generally better than HtH on a THF. After that it is strictly daggers main hand. (Note: Elemental Damage weapon skill does not stack with sneak attack nor trick attack)
Subjob: Warrior Sub is for better damage, Ninja Sub is for versatility and soloing (plus dual wield) These are the 2 main subs that should be leveled up. The rest of the other jobs, you can do as you see fit as you know more about the game.
Get a crossbow when you can, and try to keep the skill up as high as you can. You will be glad you did for soloing and pulling. Some bolts does a debuff effect when hitting mobs, these include drain HP, defense down, sleep, etc. These are very useful, but if you miss too much then that is another story.
THF at end game is very helpful in managing hate between the tank and the other party memebers. Some also take advantage of treasure hunter trait that THF have, however. How much combat action you see in end game bosses really depend on your Linkshell. Since you are not something that they cannot live without such as a healer or a tank.
I got more tips, but for now these are things you need to consider. The rest will come to you as you play.
Depends if you are keepint theif as your main. You will have a main job and a subclass job that is only half the level as your main job. You can also unclock other special classes like Samurai and Dragoon. Very fun.

The subjob quest allows you to actually select a job as a support job, aside from your main job.
So instead of being a level 18 THF, if you have leveled your WAR up some, you can be 18THF/9WAR, at the same time, essentially...
A few things to remember:
1. After completing the quest, support jobs are chosen and changed at your Mog House.
2. A support job's level capacity is only half of your main job, as was mentioned earlier. Only your main job gets experience from the things you do. You must independently level a job you intend to have as your support job, or else you will just be a 18THF/1WAR.
3. The benefits of a support job include all job abilities and traits up to the level displayed while it is your support job. Stat improvements are given as well. For instance, a Level 18 Hume THF will gain the following benefits by using WAR at level 9 as his support job:
4. Two Hour abilities from support jobs can not be used.
5. Only your main job determines the equipment you can wear, except for specific latent effect items.
6. Combat and Magic skills that are proficiencies exclusive to your support job will not advance through their usage. (IE: A THF/WHM can not increase his healing magic skill by healing.)
7. Certain jobs lose some abilities as a support job, but only a very few. These are practically the only limitations, nothing much you should worry about at this point: You can't equip instruments with Bard as a support job, so you can use only one song at a time. Corsair as a support job limits you to one dice roll at a time. Using Dragoon as a support job restricts you from calling your wyvern.
A couple more tips that i've found useful. Others here reccomend using war as a subjob to Thief but i much preferred Monk at the lower levels (in parties) over warrior because Boost seemed to help more than the minimal damage the warrior subjob provided. Also the little guys are called Tarutaru's . Not the greatest race for Thief but gear can help this. Also, others have reccomended Ninja as subjob but this can become a very costly job to level and especialy for new players this isn't an option.

Sorry, didn't mean to imply you should start over. You can still be an effective thief as a tarutaru but you will need to make some equipment choices differently than say a mithra or elvaan. For example, a Mithra/Elvaan wouldn't need to load up on agi or dex gear and attack gear. You will need to probably get some +1 gear wear as they could get by with NQ but that's just on Thief. If you decide to go mage in the future you'll have an advantage in that you wont need to worry about MP like they would. They would then need to buy +1 gear on mage jobs.
Sorry for the confusion. This is all stuff you really dont need to worry about until you start getting up to 45+ anyways and by then you'll get ideas on what you need to focus on. Tarutaru's are adorable and I wish i'd went with them personally.

Nah don't start over. A Taru thief is good. Taru's have the highest AGI which will help with your Trick Attack damage and evasion.
