Middle Earth; but set before the Lord of The Rings, sandboxy, without everyone having to be THE hero in a main storyline and with the option to fully play an evil character.
Starwars: but open ended, sandboxy and with ffa pvp

Any mmorpg with the right elements will do. Right elements being FREE, OPEN, VAST, UNRESTRICTED, RP FRIENDLY and IMMERSIVE.

Those would be nice. I wouldn't mind seeing something akin to Starship Troopers but I think that would lend itself to a more Planetside/FPS type game than an mmorpg.
That Guild Wars 2 login screen knocked up my wife. Must be the second coming!
I would love to see a Battlestar Galactica MMO. It could be done if they had a creative director who could direct creativley. Unfortunately, this is not the case with most established IPs that turn into games. They really only seem to work for folks who are not true fans of the IP.
SWG was rediculous to me and had nothing to do with Star Wars apart from the enviornment design and music. I might enjoy Star Trek Online because I am not a huge Star Trek fan. Same with Stargate Worlds.
It is almost to the point where I almost hope they DON'T make anything I am familiar with, as more than not they destroy the idea of what it was they set out to create.
The only fast establishing IP that I think would work in these current times would be a open world sand box , RVR type game called, Heros of Darkfall where the 2 factions the fanbois and the trolls battle in an epic struggle to determine the secrets of Darkfall, and who gets to be right and justified.
These people need an outlet. The next civil war will NOT be over politics or world issues...Just sayin
Really I can't think of any book I've enjoyed that I'd like to see ruined as an MMO. That being said without being based on any particular book I think a cyberpunk mmo based on William Gibson's collected works would be awesome. But only if it embrace the entire scope in a sandbox MMO where players could creat and craft hightech gadgetry, create, work for or run corporations.
Steven Erikson's Malazan Book of the Fallen. Huge world, lots of magic, plethora of races, the tarot-like ascendant houses you could align with. Make it sand-boxy with a main story questline that references the events of the 10 books.
Steven Brust's "Jhereg" series would be a pretty good setting as well. Intrigue among the 12 Houses, 2 types of magic, powerful patrons.
warhammer 40k. i know they are making it but i have heard nothing since it was announced nearly 2 years ago.
Not to mention, it seems like the latest Warhammer MMO is missing a couple races that I thought were in the tabletop version...
I'd love to see a 40k MMO, hopefully it's still in the works.
Its not just missing a couple races its missing alot. WAR doesnt even come close to capturing the true warhammer universe. A 40k mmo would be good it would be nice to have a couple of different factions lumping a few races together with at least one faction being computer controlled. Fighting from planet to planet with space fighting included would be awesome. If you had PVP and a really strong computer faction it would keep things interesting.

FASA's Shadowrun RPG

Actually I would like to see the old TSR RPG Gamma World turned into an MMO!
I would love an MMO based on "The World" of the .hack series. MMO's based on the series Shaman King and Bleach would also be fun.
Shadowrun
Mechwarrior
Crimson Skies
Dungeons and Dragons
Discworld
Jack Vance's universe

A few old school literature classics imho...
How about Fritz Leiber's world of Nehwon.
Or another not very well known Thieves' World by Robert Lynn Asprin.
Both could make for some excellent settings. You can find them both on Wiki...
Wheel of Time
Belgariad
Dragonlance

Hmm, a tough question. There are a few.
Shadowrun for sure, Mechwarrior, Wheel of Time, D&D Forgotten Realms.

Go Google Shadowrun MMO
Wheel of Time (even though they did announce it)
A Song of Ice and Fire: A Game of Thrones (Has the best potential to be a sand-boxy, non-class based, Open War game, ever)
The Great War/American Empire/Settling Accounts by Harry Turtledove
