1) Is there any US server that is the most known as being the highest pop? Where should I start?
2) Are there any classes I should just totally avoid? Do the pets/summons still get unsummoned every time you zone or hit a loading screen? That was obnoxious.
3) Should I bother to play on a PVP server or are they still just grief havens?
If anyone wants to recommend me their server and act as a helping hand to me (basically let me ask you questions in-game) that's awesome too

Best thing to do is decide on your server and then source out some decent guilds on that server from the official forum area's. Take a trip to their websites, most are open forums. Some are presented great and have some major activity.
Good luck with getting set up again.
Remember to run the "simple config" after install and check your files, will often find after a fresh install there are many little updates which may take around an hour to patch in. Then there is tomorrows patch too, which won't be that big as the DX10 isn't in.

Are you a PvEer or a PvPer. Also do you like Role Play. Cimmeria and Tyrrany are the most packed servers, but be aware of that the activity is sizzeling hot. Unless you are an totall PvP addict I would stear clear of Tyrrany (those guys are wacked. lol). Cimmeria though has word on itself for having a very good community, the best guilds in the game and good role play people. If you however want PvP but something not as established you should try Agony. This is the freshstart PvP server which is coming nicely along by the way. If you want PvE, you can choose both Set and Wiccana. Both the servers are packed and has nice communities. Also Ironspine is there, but unless you have ambitions of being part of the new PvE community there I would rather go Set or Wiccana. Set has also a lot of PvP in borderlands and in minigames.

Not all pets unsummon or die as you enter instances. You can look this up in the necro or demonologist threads. I think all classes are fun at the moment. There is of course rumors of some classes being more powered than others, but I think all in all they are pretty good all of the, I would have chosen HoX if I was to choose anything today.

PvP servers can be rough on you but it is really a much more fun experience after the Consequence system was implemented. Murderer vs Commoners is a new kind of exiting twist to the whole "you must be acountable for your own actions in PvP". As I said above, Tyrrany is tough and you'll meet a lot of expert PvPers there that probably will ripp you open in no time (till you get some practise), but if you are a PvP person, be not afraid of going to Cimmeria or Agony. Agony again is the freshstart server. What it involves starting on a freshstart server, you probably will also spend much more time with your guild gathering resources and building cities and keeps.

1) That would be Tyranny(PvP) Cimmeria(RP PVP) Set(PVE) Wiccana(PVE). Set and Wiccana are pretty much equal in terms of population.
2) When it comes to pvp Dark Templars are pretty crappy.
3) Personally i play on a pvp server, of course there are always people who will go out of their way to try to gank you, but personally i think it adds to the fun. You will find people pvp'ing it out everywhere. The population on tyranny seems a little retarded at first glance, but its because the retards do the most noise. There a loads of good people and guilds on tyranny.
If you ever want to play on tyranny send a tell to Grimmey, that's my assassin. I'm in a nice active guild that always welcome new players.
May have just sold me on Tyranny. I'm patching right now, but going to go check out the official server forums to try and see a little more.

Ok - got the trial up and running
I'd love to join your guild ObliviousX, but can I even as a trial account? Not decided yet obviously, if I'll be buying, but the first 30 minutes or so have impressed me. I get a good 30-90 FPS (depends on particle effects it seems) on high settings and it looks amazing. I can't wait for DX10 to check how they can even improve it more - some knock how rough it is on pc requirements, but it will pay off when it's still a technical beauty 4 years from now (Kind of like EQ2 would have been if they gave it any ART DIRECTION and style what-so-ever)
