I have played many MMORPG, including:
I find that, in most MMORPG, the AI is extremely dumb. You usually choose some skills, line them up on your shortcut bar and always use the same skills in the same order when fighting the same mob. Once the mob is dead, you target another one and repeat the same pattern. This is a little less true when partying as the healer has to constantly switch target and, on the rare occasions that the party aggro unwanted guests, the tank may have to switch target to prevent the add-on from hitting the more fragile members of the party. for that reason, I tend to play healers.
Of course, that is not the case in PvP but, I tend to be bad in PvP. That maybe because I play mostly healers and they are always the target #1 in PvP. While I don't hate PvP, I prefer PvE.
One thing I hate in games is bots. I understand that if a battle can be won by always using the same skills or auto-attack (that option should never exists), there will be bots. My preference would be a game where bots would do very bad. Adapt the skills you use, watch out for enemy patrols, something.
In one game I played, they almost have what I am looking for. Every mob is given an element. If you hit the mob with an attack of that element, it would do less damage but if you hit the mob with the element next counterclockwise on the elemental wheel, it would do more damage. For example, water damages fire, fire damages wood, etc. Unfortunately, in that game, the effect on damage is minimal (25%) and only one class has attacks of more than one element. Therefore, that feature was totally ignored. I might have really liked it if it had more significant impact (say 5 x normal damage when using the correct element, no damage when using the wrong element and the target switching element each time you hit it with the correct element).
I also prefer f2p or p2p with a trial period as I don't like to pay for a game before I have tried it.

Give the DDO (Dungeons & Dragons Online) trial a go, very group PvE focused with handcrafted quest designed around teamwork. Twitch combat and freedom of movement (tombraider like at times) mean you don't get the boring skill bar button mashing combat, and you can dodge projectiles, actively block and tumble which make the combat a lot more realistic and dynamic.
Behind the twitch combat you still have massive variety in builds, with multi-classing, stats, feats, skills and enhancements and some very nice effects on weapons/items, which you will need to use correctly to overcome mobs resistances and special abilities. Not all mobs have elemental resistances, but a fire elemental for instance will be immune to fire, and take extra damage from a cold attack, unless it is an ancient in which case it will be highly resistant to cold as well. A clay golem will resist all attacks and heal when hit by acid, but the resistance can be overcome using an adamantine bludgeoning or transmuting weapon.
The AI is pretty good for a MMOl, mobs will react to sight and hearing and will act sensibly as a group, like going for reinforcements or sounding an alarm. They will also dodge attacks which throws a lot of people that are use to just standing still.
PvP is limited to tavern brawls and a sort of arena system.
