well at least you gotta decide first if you wanna play a spell caster / ranged or a melee class.
i didnt play all the classes myself but i know that players who play casters mostly like their class and praise it all the time lol...
besides the obvious diffrences between casters and melee, in AoC, casters have (at mid to high levels) the ability of spell weaving which is basically casting spells on self to make the next damge spells make super high dps, that of course comes at a cost of lower HP, sometimes the spell caster gets roots himself or even looses his own HP ...
melee classes have the cool feature of combo attacks, which is basically a combination of keystrokes that you will need to perform in a timely manner in order to make a special attack. there are opening and closing combos etc...
I'm with clearsam, which type of class do you usually like to play the most? The class I found I had the hardest time with was the Bear Shaman. I think they are great in upper levels but at low levels I had a hard time with them. I also played a Dark Templar and it was a little hard in the early levels but got really good higher up.
Each user will have a different experience, those were just the classes I had a hard time with leveling up my many alts.

I leveled a Demonologist to 80 when AoC first came out. About more than half way through they nerfed the Demo considerbly.
Overall I had roughly about 6 characters all in the level 60 range besides my Demo.
The character class I had the most fun with was definately the Priest of Mitra or something like that. I did not play on PvP servers but for PvE it was definately fun. They can deal some damage as well as heal themselves and others unlike most mmorpg titles where healers are only good for healing nothing more.
Again, it all depends on your playstyle, do you:
1. Want to PvP?
2. Want to PvE?
3. Have a group you are playing with or playing solo?
Those are some examples.
For me I wanted to explore all the character types to see which one suited my playstyle the best for solo and PvE and have the most fun with.
You can do what I did and make multiple characters but be warned AoC is extremely linear and you will get burned out fast going that route.
I found the Demonologist and Necromancers were good starting classes since they handle multiple targets well. And if you're new to the game you'll find out quickly that you face multiple mobs ALOT.
But of course, if you don't want to play a pet/spell casting class, I'd probably suggest a Guardian.
Either way you'll have fun but I found those classes to ease you into the combat system a little easier than others. Just my opinion though.
I've always preferred the support classes, but in a PVP game I understand that is not always in line with survival. I like stealth type classes too, if I am to play a melee...I've found that in FPSes I always gravitate to the sniper role, and in MMOs if I am playing a melee I tend to gravitate to the ones that take the most patience.
I do plan to PVP so I'm not sure a support class is ideal, but I am not sure if a Barbarian is very stealthy, or a Ranger is very good. Assassin seems the obvious choice, but I am not sure if they are good either.

Ultimately, you're going to want to play whatever sounds appealing to you most.
I think a lot of people like the Necromancer though, or the Demonologist. They get the crazy little pets to follow them around.
Me? I'm always a Ranger because I love archery.

Dark Templar is the hardest to play properlly I think. Demo and Necro are easier. On a pvp server, a rogue template might offer better survivability.
