AC2 Feral Intendant. These guys at the lower lvls were like mini gods to all the mobs around them. In fact, I liked all the tumrok classes. they all kicked ass over most of the classes you can pick in other games I have played.

I've played almost every MMORPG out there, and I've enjoyed most of them. But if I had to pick one class that really married the perfect concept with my style of gameplay, it would have to be the Demolitionist from Tabula Rasa. Just the right combination of damage and utility. You could get pasted somethin' awful if you weren't paying attention, but if you lined up all the attacks right, the resulting firework show was amazing. I also like playing characters that have a "bag of tricks," so the concept was appealing.
Close second: Hunter - Lord of the Rings Online. Great soloability, good damage, some neat tricks. And the travel abilities -- wow! Good class for impatient people. Unfortunately, when I was playing, Hunters had a bad reputation due to a sizable portion of ignorant and inexperienced Hunter players.
All classes in Vanguard: Saga of Heroes are great, I think Blood Mage is the best.
Back then, I also loved the Baldurs Gate 2 sorcerer (for optimizing the spelllist was a huge fun, and BG2 is the only D&D game where mages are actually a fearful opponent), and I loved Shillien Elder and Tyrant in Lineage 2.
Necromancer is my all time fav class nothing is cooler than having an army of undead at your beck and call. When ever a new Fantasy MMO comes out the first thing I look for is if it has a Necro class.

At first, it's more about the style of play than the class: a Scrapper in City of Heroes/Villains or a Retribution Paladin in World of Warcraft. These, for me, are all about releasing all the strength of my fists or the weight of my hammer on my enemies, respectively, making them suffer physically (as oposed to psychic or laser beam powers).
Playing a Controller in City of Heroes is also something pretty unique: that is really controlling crowds, and can be awesome fun witht the proper builds - a whole different style of play for one character instead of having a Tanker and a Healer and a DPS.
Oh, and chasing people around the galaxy with a Bounty Hunter in Star Wars Galaxies is also something unique!
None. Best "class" system i've so far encountered in MMOs was in my first one (Entropia Universe, old Project Entropia), but since it is (RL) money hungry game i've been playing Eve Online with the same kind of skill system idea.
I had so much fun with this class, Kite groups, soloing, raiding, groups. It had everything. I loved it and I still play one. Never found another class that I loved more then this class.
I loved dotting mobs and watching them slowly die while I watched. If I got into trouble I could FD and not worry about dieing. So many times i was the reason my guild won raids and so many times I was the last one alive after a failed raid. I loved it, it was so much fun.
Well played I can kill groups without ever being hit, a single mistake and I'm dead. Also like the way a contoller can make a good group an awesome group.
I loved my Mage the first year of WoW. I loved PvP'ing and dueling with him (ah the constant random fighting in the world during that first 6-9 months....).
My Creature Handler / Bio-Engineer from Pre-CU SWG. It was so awesome to go out into the world, sample DNA from Rancors and other awesome hostile animals and then genetically engineer my own pets with awesome stats from that DNA. I'd love it if an MMO had that again. /sigh
My favorite class in any game ever is the EQ1 shadow knight. It's a tank with feign death, snare (reduces run speed of target, or in the case of a wounded, fleeing monster, stops it in its tracks), lifetaps (does damage, returns HP), all kinds of aggro management, and a just-for-fun pet.
My second-third-fourth-and-fifth is probably actually a 4-way tie for second place: EQ1 Necromancer (for many of the same reasons as SK, only with more damage dealing, better pets, and less tanking--fun and versatile), EQ1 Druid (extreme versatility, just a blast to play), EQ2 Assassin (for making me feel like a Cuisinart , slicing and dicing the monsters into tiny little bits) and EQ2 Warden (because it made me pretty popular with groups at the time I was playing one).

My absolute favorite would have to be the Teras Kasi/Fencer/Brawler trio from Pre-NGE SWG. I've never felt so specialized and deadly in one single form of combat (melee) in any other MMO.
Aside from that, honorable mentions go to the Mind Controller from City of Heroes, the Magician from EverQuest 1, and the Disciple from Vanguard.
By far the best class ive ever played, being able to string songs along for damage/hp/buffs everything .. took skill to do, but was still amazing class.
Kiting will never be the same .. its still shocking on how no ones even thrown an actual Bard class into their games, everyone who tries makes it some melee class who can sing a song .. but yet, never coming close to Eq1.

Numero Dos in the character love. Sorry but muh wolf pet, killer buffs, killer dots, killer heals .. hah was amazing. although pvp made me want to cry.
The mesmer class in Guild Wars is a lot of fun. Basically, it's a counter class: anything you can try to do, I can probably stop you from doing if I know what's coming. Of course, if you stand there doing nothing, I can't do much to you. I've never seen anything remotely like it in any other game.

City of Heroes scrapper - ironically, that was the first non-text game I had played where the sword slinger could actually do significant, competitive damage (not a tank). It was very liberating. I have still kept my Coh account current, even though I rarely play, just out of appreciation.
My current most played class is a fotm ret paladin (kickass melee burst damage + heals/stuns/bubbles/rezzes/etc = holy crap this is dumb but whatever).
Warhammer pissed me off because all of the classes that I might have liked are on the "no-way-it's-not-evil" destruction side. Conan still has me bitter about a lot of balance issues.

Herald of Xolti in age of conan, most original class i played in an mmo. Think of a melee fighter mixed with a fire mage that can change into a demon.

Kinda like paladins or clerics.
When I play a sandbox game I try to create a heavy armor Mace wielding character with support magic/Heals.

I also remember fondly my Ranger in Shadowbane.
For me I've always loved three classes:
EQ2 Fury: Great heals, shapechanging, and good DPS
AoC Bear Shaman: Crazy survivability, and I loved the healing system in AoC
WoW Deathknight: Cool concept, heavy armor, big weapons, magic and pets. 'nuff said.
Sounds like EQ1 and AC2 had some pretty awesome classes. I am regretful that I never played those games now!
