So I remember doing the trial for this game over a year ago. I'm in between games at the moment waiting for Aion and The Old Republic. How hard is it to actually get into this game? It looks so interesting to me and its different than any other mmo I've played before. Also what is the level cap and what is the gameplay like?

The first rule about EVE is..... there is no level cap.
The 2nd rule about EVE, there are no classes (per sec)
The 3rd rulee about EVE is, its more of a love affair then a game.
Finally, the last thing you need to know is... there's a 21 day free trial, which you can repeat several times if you really want to kill some time trying things out.
The learning curve is quite steep for some, easier for others.
I've studied countless tomes on EVE, and yet still know so little after playing for 2 years now.
If you really want to give your trial a good chance, recommend you read this new player guide first before you get started.....

First off there is no levels. Skills are all based on real time learning. As far as the learning curve, it is fairly steep. The best thing to do is find out what ships you want to fly before you actually start to play. This way you waste as little time as possible learning skills. Although this will not help with figure things out ingame.
Gameplay is fairly simple in the fact that it is point and click. Thats where the easy part ends imo.
The biggest advice I can give to new players is to not fly a ship before you can fit it correctly. You will just waste isk. I would be happy to help with other questions and I know this post is kind of broad, but your post is more on a general basis.

Learning curve is high, it is normal to get a headache
For some people, like myself, having a cap is a psychological need.
To me, rather than having "no levels"="no grind", "no levels" to me means "endless grinding".
But then I'm a pessimist, your mileage might vary.
I have another question. Is this game mostly soloing or is there any form of grouping for missions and etc? Is it mostly instanced? or streamless and open. For example would I see another ship fly by while im minning somewhere?
There is no instances in EVE, it is all open world (space). You can and do see other ships in space with you. You can go pure solo if you wish, but you won't get to experience all that it has to offer that way. It is not exactly streamless in that sense. The systems are all on clusters, there is multiple systems per cluster to help reduce lag. However there is 1 system that has it's own due to how many people are there.
Edit: As far as traveling between systems, there is a loading period between them. You can't just fly from 1 to the other in a seemless world.
would any one who plays mind offering me a 21 day trial? the 14 day trial doesn't seem like long enough to really see if i love this game or not, due to the intense learning curve. I'd greatly appreciate it.
ive been playing it for a few days now... learning curve is outside this world, your just a pilot and there you are with 500000 possibilitys and nothing telling you what to do... sometimes i feel like im working when im playing the game, like i dont really get to much fun out of playing it, it just passes the time... but i guess this is cuz ive solo'd it so far.... i think i would become completly addicted to this game if it could just catch me, but that reel wont tug, lol
not sure if that was any advice about the game, just my personal take on it so far... i wanna kill people that arent npc's and put my ship to the test, FUCK!!!, lol

you are 100% correct when you say eve is a nearly endless grind, even 5 year vets dont have every skill maxed out yet to my knowledge hehe, but then theres no real reason to max them all either except maybe bragging rights
I went to check how long it would take to max every skill, and my eve-mon crashed lol. I was upwards of ten years before it did. This also didn't take into account the new skills from this expansion. Before last expansion I know there was 1 guy who had every skill in the game learned to at least level 1, and a second guy was close.
