Even though it's possibly that we actually will be able to play as other races than humans, it's not yet 100% confirmed.
If there was only humans to play and all other races were just npc's would you still play the game?
I would probably play it anyway but I would be dissapointed though!

I'd play it still, it's a Bioware game! I'd be very disappointed though.
Probably not. It would just be weird if all players were humans - and I found the human characters in the KOTORs really dull looking and not very interesting.

I can't stand single race games, but this game also has so much promise. I would be undecided with an inclination to not play. I recently tried Runes of Magic. Aside from the game being too hardcore for my tastes, I really had a problem with everyone being human, especially in a fantasy setting. On top of that, Star Wars is vibrant with alien life forms, it would be strange at best if there were only human PC's.
With PvE raiding, it has never been a question of being "good enough". I play games to have fun, not to be a simpering toady sitting through hour after hour of mind numbing boredom and fawning over a guild master in the hopes that he will condescend to reward me with shiny bits of loot. But in games where those people get the highest progression, anyone who doesn't do that will just be a moving target for them and I'll be damned if I'm going to pay money for the privilege. - Neanderthal

Maybe there won't be all humans, but I think the majority will be humanoid races, even if they're aliens. For instance, Mandalorians.
there are other races ! mandos are one of them ! maybe zabrak and twilek too...but if there are ONLY human.....i will play it !

I would still play it.
I'd actually respect Bioware for taking what would be such a controversial move lol It would actually be a step toward keeping the feel of the movies since the main characters are all humans.
But I think it's likely they will allow people to play the more humanoid races at least rather than face the slew of complaints from others that will result if they don't.
I'd play it, but I'd be very disappointed in Bioware, theres no reason not to include atleast 4 or 5 other races such as Mon Calamari, Bothan, Zabrak, Twilek, Rodians, heck even Wookies

The real question is would you play it if you can only play as Gungans?
But serioulsy, I'd be pretty dissappointed if humans were the only playable race. Sure, in Kotor you're character was a human, but at least you had twi'leks and wookies and droids in your party. Personally I think it's more fun to play as either a Rodian, Ithorian or Twi' Lek than as a human.
