Normally I don't approve of telling people this, but I suggest you use the Search feature for "Fantasy" and "Sci-Fi". There have been at least 3 or 4 threads in the last year with tons and tons of suggestions.
Normally I'm not so adamant about things, but read "The Book of the New Sun" Series, by Gene Wolfe. I've read it 10+ times, and I still can't even come close to picking up on all the underlying meanings. Premise:
It chronicles the journey and ascent to power of Severian, a disgraced journeyman torturer who rises to the position of Autarch, the one ruler of the free world. Severian, who claims that he has perfect memory, tells the story in first person; the books are presented by Wolfe as a translation of Severian's writings into contemporary English. The series takes place in the distant future, where the Sun has dimmed considerably and the Earth (referred to in the series as "Urth") is slowly cooling.
Every time I start this series, I think I have a firm grasp on what's going on. Boy am I wrong. For re-readability (which is what makes the classiscs like LOTR so enjoyable,) try this series out.
best fantasy series for me would be wheel of time. average number of pages would be at least 500 per book though and there are 11 books already out so you would need to invest time in getting the whole story...
Check out City of Bones, it has a pretty cool setting with some fantasy aspects. All sorts of things from pixies, faeries, warriors, demons, vampires, etc are in the books. They are great reads, part of a trilogy. City of Bones, City of Ashes, City of Glass.
Also if you are into horror/action books check out the Demonata series by Darren Shan. Really cool stuff in those, however they are very short.

I quit the series around book seven. The series really, really dried up at that point in my opinion. I mean, I went from an avid reader, to so unentertained that I completely lost interest in the series.
