I can ride my horse through the sector 1 desert, with my fedora topped on my head and duster blowing in the wind, while playing the Good the Bad and the Ugly theme in the background. Total. Awesome.

Playing a game where there is a huge incentive for player interaction because of the facts that there simply is so much to find out and so many choices to make. I find myself asking and answering tons of questions every day in clan chat. Also: helpful people can really shine in FE even if there isn't so very much grouped pve content yet.
Playing a game where getting to max level is not the only thing which makes the whole leveling curve meaningful. If you take your time to keep your tradeskills up, get your book collections done, make some money with salvaging or crafting stuff and making sure you get all the AP out of a town before you move on, it will take you months to reach level 45 but you get the feeling that your character really becomes 'rich'.
Playing a game which is already damn addictive and of high quality in many regards a short while after launch, and a game of which I am confident that it will only improve more in the years ahead,

First off, I think the game has improved since beta, at least from what I've heard.
As for the rest of your post, I think the biggest thing for me is the skill system. I like not being pigeon holed into a class. You're free to tinker with skills and build a character however you want just like in AC. If I want to have a character with 164 rifle and 15 strength, you can do it. No two characters are alike. The last game to really incorporate something similar was AO. Skill based games got shuffled aside for the more mainstream, easier to play class based games.
Another thing is the open world exploration. I can go anywhere and explore. Yes I may be killed instantly in some places, but I can still do it. I loved that about AC1. I could go to the dire lands/obsidian plains at L20 and run for my life from Tuskers, Virindi, and Golems and it was awesome.
There is also the community. It's great in this game and reminds me of how fun the community in AC1 was early on. Helpful, curious to explore the world. People constantly asking questions about this and that as they delve into the deeper world around them and figure out how it all works
The story line in this game is great too if you take the time to read the quests. That was something else I missed sorely from AC1. The lore in that game was beyond compare. This game seems to have a good base to build from lorewise as well and I look forward to how it plays out.
That's not to say FE doesn't have it's quirks or that it's the best game out there visually or otherwise. But it's got good visuals, the gameplay is solid, and combat is different from the usual press this skill wait for the animation, press the next skill, etc.
It's just a lot of the little things that make the whole so good to me.
To be completely fair, I have only been playing Fallen Earth for about two weeks so I may still be in the honeymoon phase, but so far I am enjoying myself far more than I have in previous MMO's in years.

Best implemented skill-based system I have ever encountered I love the post apoc feel since I love Fallout and this gives me a good wasteland feel. The slow comfortable pace, the last time I felt this free was with SWG pre-cu, while still having heaps of quests to do. Honestly it is a heap of little things for me, mostly it feels like my gaming home.

Hunting giant cockroaches with handgrenades, just because I can.
The thrill of finding a can of dog food while scavenging through a trash heap, because every food buff is a good buff.
Trying to figure out how to kill people with poison I made from harvesting cactus juice.
Sunsets in the desert.
Dual wielding with a straight razor and cork screw.
Riding to the top of a butte and seeing hills on the horizon which I can visit ... after a 30 minute ride.
Crafting a pen and paper so I can research how to craft a bridle so I can raise a horse so I can ride across the wasteland killing the enemies of my chosen faction.

However goofy you look at the start, with bootleg equipment, some of the higher level armorsuits/gasmasks/serious guns looks incredebly cool/creepy.
