I've played a few of the GW betas and each time I end up playing a monk the most, but end up with the same question; should I have gone Elementalist/Monk instead of Monk/Whatever?
Why? Well because as far as I've been able to tell, it doesn't really matter what your primary and secondary classes are.. you gain access to the same skills either way, so the advantage of taking Elementalist first is that you get the huge mana bonus.
Am I missing something in how the primary/secondary classes work?

If you picked a monk/warrior, your available skill sets would be quite different than say, a monk/ranger.
From what I have seen, each profession has its own skill set, so more or less you get two different skill trees to work up. Obviously you want to choose complimentary skills to better your abilities. Some skills will overlap, but my understanding is there is one unique tree for each profession.
As for primary/secondary, I hope that your primary profession is your strongest. Otherwise, it wouldn't be a "primary" profession. It should be "first" and "second" profession in that case. Primary to me, means your first/best skill set. But I don't know much about that aspect.
I can see I should not give advice because pirates are not very smart. So I will read and learn.
As a primary monnk you have access to the attribute Divine Favor... which means anytime you use a monk skill you heal XX more based on the skill ranking you have in this attribute.
As a primary Elementalist you have access to Energy Storage....which means for every point you spend in this attribute line you increase your base pool of energy by XX.
The armor you are able to wear is also dictated by the primary profession you choose.
An El/Mo can take ALL monk skills if you want.
Plenty of people choose Ele primary for the Storage when playing a Monk, especially if they do a lot of buffing I think.
Divine Favor is apprently the most efficient way to go for a primary healer. Fewer casts means less chance for interrupts and less time.
