Trying to decide on a class, mainly split between 3, Warden, Champion, and Captain. I'm willing to do any of their jobs, I'm just wondering which people considered to be the most fun.

Well I'm not much of an expert but for my main I have a lvl 30 Captain and it's a class I just get, I understand it and love playing it. I also have lvl 15 Champion and it seems more confusing to me at the moment there are just more skills than you ever need to kill 2-3 monsters at once. I plan on making a Warden at some point ubt haven't played one.

The class that was the most fun for me is the Loremaster. Something about being a combat chemist / tree hugger is just fun

I'd go with a Champ to start and get used to. Wardens are probably the most interesting of the 3, but there's alot of memorization. With the way the gambit system works, it kinda reminds me of AoC's combat system of combos in reverse.
While AoC guides you through the combo when you choose it, (moltenstrike, UR, UL), Wardens work the opposite (Special Manuever 1, SM3, SM2 allows foot slam gambit).
Wardens also get "Forced March" in their teen levels- +25% move speed, which is nice. Downside is your power drops to 10% while it's active.
Given enough responses every class will be listed here as the "most fun" to play. I would tell you the Burglar is the most fun for me. The next guy will love Minstrels.
Given what I know about MMO's and from what you told me I think you'd find the Captain fun. Here's why...
I can tell you want to be in a useful class role. You mentioned "jobs" so obviously you're familiar with class roles and know tanking is probably one of the harder if not hardest roles. Yet you still mentioned an interest in the Warden - a tank. However, you didn't also mention the Guardian. (I know, I know...now psychology is playing a role in my response.)
You also mentioned the Champion and no ranged combat at all which says you have an interest in melee combat. But the Champion is more one dimensional than most classes.
Using a logical approach I think a Captain would be fun for you. It plays an important group role (buffing, spot healing) and still carries a big sword.

Heh, I like you, your right, I hate going range. Though I didn't mention Guardian not out of hate for tanking, but rather beacuse 1. I've heard they are boring, and 2. If I'm going to tank, I'm going to tank with a spear and shield.
Also, yeah, I can safetly take champ out of the picture, after looking up their skills, they seem horrendously boring.
The official forums (which I cannot login to for some reason) says that captains are late bloomers, how true is this? Are they just saying it to get people to stick with captain?
And I didn't say burgler beacuse, well for some reason, even though I normally love stealth classes, I can't bring myself to try Burgler, I think it's beacuse I always think Bilbo Baggins when I try to make one.
I would just remind you to be mindful of Race too. Certain Classes can only be played by certain Races. If you wanted to be an Elf, for example, you cannot be a Captain. In fact you have to be a human to play Captain. That may not matter to you, but something to keep in mind.

Captain
My main character: I am really enjoying it.
They can do most things, but not especially well.
This includes healing, damage dealing and tanking.
What they do well is buffing and summoning!

Warden
My secondary character. If you want to play a tank, it's a
better choice than captain or champion. Their combat mechanism
is very different to any other class.
Give it a try and see whether you like it!
The Mines of Moria expansion set is required to be able to play this class.

Champion
They can dish out a lot of damage and can tank as well (but not
as well as a guardian or warden, but better than a captain).
They are mainly renowned for the amount of damage they dish out and their interruption skills.
Why not level all three to level 20 or 30 and see which one you like to develop further?
Although I have a level 62 Captain, my favorite class to play is my level 65 Rune-keeper. If you like to nuke, and I was born to nuke, this would be the class for you; and, it has the benefit of also being able to heal.

Well I have two captains that's how much I enjoy them.
Never got a champion out of the teens. Same with Guardian.
Loved my warden but - it's very hard to switch to another character and then go back to warden - they fight in such a different way.
Try the Warden. The class is very unique; I've played no other class like it in any MMO.
It's also insanely fun to pull a ton of mobs onto yourself as a Warden. Here's a video of one bad-ass Warden that I had the pleasure of grouping with before. What a surprise when he ran in and aggroe'd all of this big camp of salamanders in the Flaming Deeps. The video is of him pulling all the mobs in the ghost forge solo instance at once, something no other class would be able to do.

When I played, I had the most fun with my captain. I also had a guardian, burglar, loremaster, champion and warden. The captain just fit my playstyle best. It was fun to switch roles in a fight as needed.

I have a 60 Champ and a 60 Captain..... if i want to just button mash i play my champ not much to him just hit watch for some healing spells a mob is goign to dish out and interrupt him... If I feel like playing in a group i jump on they cappy which has become my main... much more fun! ive never been one for healing but hes alot of fun you have more controll over what you can do.. i can solo alot easier and take on mobs that i wouldnt even consider taking on with the Champ. and if you like to group most groups will take a cappy over a champ seeing how they can dps heal and buff they bring more to the table so i have found out. It is nice to go brain dead occasionally though so champ is nice to just kick ass and smash things. good luck to you oh and i never got a warden past 24 to many combos to remember for me.
Going with Warden, tried champ, to button mashy, tried cap, and while I'm sure it gets better later on, lack of skills made it boring to me. Warden though I never feel rushed and feel like I have real control over what's happening.

I've also decided I want to stick with Elves. So cap is definatly out for now.
An elf with a stick means "warden".
Basically every class is fun. Its all purely subjective. My brother loves to tank, when he played WoW he used to tank, now that he plays LoTRO he has a 55 Guardian and just rolled out a Warden and is loving it. Me, I never found tanking that exciting, and love my Captain to death.
Like I said its going to vary from person to person, look up the descriptions of the classes and ask yourself what role really fits you the best. You're bound to have fun with that class.
I level an elf hunter to 50 in the past, when this was the level cap
I level a human loremaster to 45, in the past too (I mean with no expansions, before the soloing oriented changes )
After changes and releasing MoM, I check a dwarf minist to 32, was fine but then I saw the light
I purchased MoM and decide to try the Warden. There were two reasons put me to chose this class: multirole and gambits system. Lotro is a pick and key system combat game, this is. But combos offers something different. In fact, Warden offer a wide range of attacks, but they covered Melee damage, Doa, Healing, defense buffing...nice to be a "great for all", not a "right for all" class.
Today, I am 42 and at Angmar. Making a levelling run in order to get Moria as early as I can (dont forget I check all Soa with my hunter in the past). I need to enjoy the mine and Lorien forest, this is a matter of "mmorpg" life...
I think all classes could be fun. It depends of what did you taste in the past. For a newber, I suggest a more classical DPS, hunter or champion. Minis is a relevan healer, as can make a huge amount of damage in some stances. May be Warrior and Cap looks like less attractive for me
And about offensive spells, I think this game has the two best and most balanced spelling clases in the mmorpg world. Lore and runes are so cool...
I really like Warden. LM is cool too, but they kind of nerfed their melee abilities, so they are bit more of a nuker now than a jack of all trades. Keeper of Animals is still a good build but you definitely kill slower, too slow for me now, i pretty much stick to my Warden since I got back into the game. Level 60 LM level 52 Warden.

Unfortunately a couple of classes actually kind of suck or just don't play the same at level 20. For example certain key Warden abilities are not gotten until the 50's. Their Group HoT/aggro steal and their power return abilites are both 50+.
I soloed a level 60 sig with my level 52 Warden simply by using the HoT and DArk before the dawn to keep having power. I missed 90% of the time so it took a long time. But it would have been impossible to do before level 52 just because of that power.
LM is similar in that certain key powers like roots are not until 30s and 40s and good melee is not until the first legendary trait. A Master of Nature's Fury specced LM is a good nuker, but you really can't do it until maybe the 40's and probably more like level 50+. I mean you can nuke but you won't have the right traits to do lots of damage and you won't get the right controls until about level 40 and you will actually seriously hurt your only good control if you spec into it too early and make yourself gimped.
So questions like this are kind of variable in answer as you get people who did classes up to 20, which really should be a good survey but for probably a third of the classes is not really a great.
I really wish Turbine made some classes mature earlier, it seems kind of dumb to me that the main CC class gets roots so late.
Somewhere along the way i've tried every class at least once until the late teens. The Champion was the first class i really got my teeth into, eventually leveling to 60.
Champion:
+ Easy to play (great starter class). Good solo class. Great area effects for taking on multiply mobs.
- Not the best Tank in the box. The easier play style can make it a bit repetitive.
One class that never appealed to me was Minstrel (I guess it was all that defeating people with songs nonsense). But i finally gave it a try and WOW, what fun! Just level capped to 65 the other day, and had a blast all the way.
Minstrel:
+ Again easy to play. 'War Speech' skill creates two classes in one(OFF - The best healing class hands down, ON - a great solo class that can pack a suprising punch to single or multiple mobs at the expence of heals). You'll be everyones friend and always in demand for grouping!
- Having two distinct 'flavours' of minstrel can force you to do a bit of a skill juggling act if you don't specialize in one or the other. Can use Medium Armour, but you soon find it's Light armour gives you the useful buffs (Will/Fate/Vitality). With 'War Speech' on you are very limited in your ability to heal making you suprisingly vunerable (even more so if you're only using light armour)
So far, the only class i can really say I really didn't enjoy was the Loremaster, I can't really say why, it just didn't click for me, but i'm sure i'll give it another go one day.
As other people have already said, choosing the right class is really about what works for you. Try them all, even the classes you thought you'd never like. personally, i've been suprised and delighted with my Minstrel.
