If you try to enjoy this game for its PvE, I think you will have this constant feeling in the back of your mind that you're missing out on alot of things. Also, PvE content has a habit of turning into PvP content quite quickly, sometimes more, sometimes less stressful.
PvE is mainly agent missions, but I find them to be very similar to each other and they get old, fast.
Just the two cents from a 3 week player
If you stand VERY still, and close your eyes, after a minute you can actually FEEL the universe revolving around PvP.
PvE content could be mining, scanning, scamming, industry, trading, missioning, complexes, ninja salvaging, ect, ect. There is alot you can do in highsec but it all takes time to get the skills. Just remember highsec isnt really 'safe' , its just safer.
EVE is probably 1 of the only major titles i havent played thats got some decent reviews over the past years, i dunno, swg gave me a bad taste in my mouth all those years ago and ive shy'd away from sci fi mmo's since then, but by the looks of whats coming out and whats released in the last year, sci fi and post apocalyptic seem to be the only choices these days
Do the tutorials, they help you get going. After you get the basics down: Hit F12 at the bottom of the help window is a button that says Career Agents, hit that and it will list the nearest ones, those will hook you up with some skill books a ship and teach you some of the various things you can do.
If you are wanting to do PVE you will most likely want to get into Exploration. All high end PVE is really PVPVE b/c its out in lowsec / nullsec. But you can stick to high sec and still get enjoyment / make good friends with others etc.
Best advice someone can give you in EVE: "when in doubt, right click". Feel free to hit me up ingame and ill answer any questions you might have.

If by PvE you mean 'quests' ("missions" in EVE) well... quite a lot of people seem to do pretty much nothing else. But my opinion is that they're pretty dull. There are only a few dozen and they just repeat endlessly.
If you mean 'crafting' - ship building, invention, mining, trading and so forth, then these are what I would call "non combat PVP", and there is a very active, competitive sub-community that plays in a highly sophisticated way. Most of the richest players in the game got that way doing these things.
PvE content is most awesome when done in a PvP context.
As example, exploration is really fun in low security space. The encounters are rewarding and the NPCs not all too difficult, but while lingering around at the site you might be scanned down by unfriendly player pirates or other explores. Certain measures and tactics can be used to avoid confrontation like speed running the site before anybody has a chance to catch you.
I enjoy EVE to its fullest when I play the part of the juicy beef in front of the lions mouth, but always just out of reach.

This pretty much nails it. People slam EVE for not having good PVE content, and if you mean story driven quest lines and raid encounters, they're correct, it pretty much stinks.
But PVE activities include everything mentinoed here (non-combat PVP is a great term) and for some real challenge consider tackling life in wormholes and battling the Sleeper menace. Nothing like a good class 5 or 6 mag site encounter to get the blood pumping, especially if you bring in your carrier.

You won´t find random pick up groups... well you may find one or two, but after this you will learn. You will read a message "EVE is not for carebears." I love production; making t1 frigs and selling them overprice & T2-invention is a whole new ball game that i'm enjoying. But hey thats just me ;o
To be honest I've never understood the need to differentiate between PvE and PvP.
I just look at the other 50k people logged in at any given time the "mother of all AIs." This is why eve never gets boring.. people are smart and they adapt. Any computer AI can be beaten as soon as you can predict what it is going to do. This is why I've never lasted more than a couple months in PvE games... they get BORING.
What seems to set eve lovers and eve haters apart is enjoying an INSANELY DIFFICULT challenge. I love the fact that doing something stupid in eve can quickly lead to loss of ship, clone, and a ton of ISK. The pressure is never really off- if there is a way to kill or screw over another player, some dirtbag has already thought of it and you better be on your toes all the time.
Yes, I know what the OP was asking. There is plenty of PvE stuff to do in eve in the conventional sense. Research, mining, manufacturing, missioning, and exploration (tons of stuff here, including wormholes). You just have to realize that while you are doing ALL of this, smart people are going to be trying to kill you and steal your stuff. If that upsets you, save yourself the trouble and play another game.
I personally thank the gaming gods that there is a company like CCP that has the balls to make a game as hard and complex as eve. It's not for everyone and there's no reason it needs to be. I understand and respect that some people like games like WoW and LotRO... I tried them and they bored me to tears. So just remember to add the words "for me" when you call eve boring. I can assure you that for people that enjoy patiently thinking their way through really difficult problems, eve has no equal... and I don't see anything like it anywhere on the horizon.

To be honest I never tried production, because when I view at the Blueprints, it sounds like I have to kill many asteroids... and find a production spot.
Wormholes can classify as both pve & pvp, with EVE player interaction is usually inevitable no matter where you are and what profession you do. As for looking at blueprints minerals cost, you really don't have to mine it all,buy orders work wonders. Also though be careful if you look at producing the big stuff, i.e battleships theres barley any profit margin right now. For finding a place to produce you can hop in a corp that has a POS or you can just rent factory slots from stations.

To be honest I never tried production, because when I view at the Blueprints, it sounds like I have to kill many asteroids... and find a production spot.
Wormholes are primarily exercises of PVE with a smattering of PVP especially if you live in class 4-6 holes.
But that said, our POS came under rapid assault one night by a well prepared enemy which we battled and drove off killing their combat POS in the process.
You will will always have a element of PVP in everything you do in EVE, but you can control it so that the number of encounters that turn out unpleasantly for you are quite limited.
Some folks go years w/o ever dying, just a matter of how smart you fly.

You mean in the same way a carpenter has to go into the woods and fell trees or a mason has to work in a stone quarry? Lets not get to cooks in restaurants who have to go and get all those potatoes and vegetables from the fields.

Edit: Incase i didnt came across, you buy the stuff. For the same reasons the people in my example above buy their stuff. Even stoneage humans where able to grasp that concept atleast in the form of bartering, hell some animals do.
