THE DREAM SERVER I WANT
1. Chance to PUG hi-end raids (ICC, HC modes of TOC and ULD), with a good frequency and good chance of success.
2. Mature environment, without kids aiming to be Bruce Lee and Chuck Norris; I am quite aged, and looking for fun and good time mostly...
3. High Horde population, EU English speaking
4. (possibly) lack of Healers
I am quite experienced, but tired to raid 4-5 days a week on fixed days to save my spot.

It'll be difficult for anyone to recommend a particular server since people only know about the servers they play on. But I can give you some general suggestions.
1. Generally, PUGing high end raids is an exercise in futility. You'll usually spend most of the time wiping, regardless of what server you on. Are you against joining a guild for some reason?
If you must PUG raids, then I'd suggest to join a high population server to best your chances that there will be PUGs to join. It may be a moot question in the future. I read that Blizzard is considering adding raids into their cross-server LFG system. Considering how popular and well-received the LFG system has been for 5 man groups, I think it's a given that it will happen eventually. Finding raid PUGs will be much easier then.
2. You can never guarantee any server will be more mature than another. Again, I suggest joining a guild. Most guilds have mature attitude as a requirement for joining, so any lugheads that act like a fool just get kicked out. Then you can stick to guild chat, and don't even bother being in the general or trade chat channels.

4. There's always a demand for healers (I should know, I play a priest).
One more time, I must recommend finding a guild. Use the realm forums (link for EU realms: http://forums.wow-europe.com/child-forum.html?forumId=11101&sid=1), guilds usually post there when they are looking for members. Don't worry if you're not looking to be in a hardcore raid guild - casual, friendly guilds are popular these days. Playing WoW without a guild is what creates most of the problems you are trying to avoid.
