I played AoC to level 35 or so when it came out, before quitting, almost completely solo. Not that I didn't want to team, just didn't seem necessary. By the time I got high enough for that dungeon (Black Temple maybe?) nobody was around to team with. I'm thinking of coming back, but what I definitely don't want is another Warcraft solo levelling experience.
How is it now? Is there anything akin to the public quests of Warhammer Online? Are the server pops healthy from 21-80? Do people casually team for levelling?

I've been playing AOC and have no trouble finding groups. There are many, many more players. The Wiccana server is full of people. Be prepared, AOC is a different game now. It is soooooo much better than launch. I've had no trouble doing dungeons, raids, premades, or group quests. Give Hyboria another shot, you won't be disappointed.

My experience too. I have often just gone into a zone, cursed vanir etc. at the hubs and gotten PUGs. Also there are a lot of very active grouping guilds.

I am in the same boat, I was thinking of coming back myself. Whats the largest populated server at the moment? Any recomendations on a starting class?
I think Wiccana has the highest pop...but not entirely sure on that. I play on Cimmeria and the pop there is very healthy.
As for class...It all depends on you play style. I recommend Bear Shaman to everyone because it's a pretty fun class to play in both PvE and PvP.

bear shaman is by far one of the classes where you need skill and micro mangement.
btt : lvl from 20-80 is easy , u will find a group on most of the server for every dungeon and when u are 80 u will find t1 / t2 random raids.. BUT forget about khitai its a boring grindfest.
if u start grinding your 2nd or 3rd faction to max or you gain one more hardmode tokken towords your 392 tokkens ( you need for head and chest ) .. or.... OH ... yeah u need round about 10k marks of acclaim, and while you grind the shit out of khitai ... you realzie
that u don t want anymore any of those fuckin shiny khitai epics , but yeah thats the only content left... toth amon 60 % ...

Yea I play on Wicanna and it has a very healthy pop and I have no issues getting into groups with any class. There are also quite a few large guilds that have open recruitment and help with the leveling. The game honestly, imo, has an atmosphere like it used to be in mmo's before the WoW revolution brought everyone and their mom in: The community is actually helpful for the most part, and people actually group up for non group content. I know it seems imposssible, but this game seems to have people who actually socialize outside of guilds and small circles, which is quite a rarity in most AAA solo friendly grind to the top games. I actually enjoy exploring and taking my time in AOC. It has a free unlimited to lvl 20 trial. I recommend everyone try it, if you are interested.
As far as which class: any healer is going to have a slightly easier time healing, but I do agree that the bear shaman is a bit more complicated when compared to the caster healers to play. This, imo, makes the bear shaman more interesting to play.

Have they implemented any sort of LFG or Search functions that work? Thats one of the biggest things that drove me crazy was having to read and spam global chat constantly for groups. Some kind of system where you could just set an lfg flag for a specific dungeon or group quests for a zone would have been very convenient.
Don't play on Tyranny.. i'm lvl 28 and I haven't seen enough people around in towns to get a group.. so far i've joined 2 groups.. both lead me out to the dungeon and then proceeded to kick me out of the group just to kill me. So yea what they say about Tyranny is pretty much all true.. the community is just awful. Which is ok for me because I feel no remorse ganking and griefing the hell out of people on that server.

Now I must admit to a foggy memory, but I think at launch they had one that just didn't work well. It works better now, but a lot of people still spam global or regional chat. While you can flag yourself for particular things, many people dont even though you see dozens of people in the zone in question.
BUT you can, and I have many times, sent tells to people via the LFG window and gotten PUGs or to fill out short guild groups. I remember not being able to do that at launch and like you it was a big negative on the game, but I forget why whether functional design of the LFG window or low player numbers.
