I would say Eve online.
I tend to play in low security space as a non-aggressive player.
It's crazy how real Eve feels when playing the game around players that would sell their own mothers for a nickel.
SWG by far.

I found the most immersive world in Ryzom. The only attempt in the MMO market to make a virtual world more than just a game.
EVE was immersive at beginning but the open space became old pretty fast.

A handful of notables;
SWG - for providing an awesome housing and city scene.
Ryzom - for the changing of seasons and migration patterns
MO - for the first-person view that accentuates every little thing, horse riding was awesome.
FFXI - dunno what it was, but I absorbed every inch of that world that I could find. Great environments.
Wurm - for making the mundanity of medieval lifestyles treacherous. Always an adventure, doing anything really.
Eve too, for crafting lore that you can find anywhere. There's backstory to anything and everything if you are looking for it.

The original Everquest far and away the most Immersive i ever played. I never tried EVE but I think I will give it a go after hearing that it is immersive.

S4 League is a shooter-style TF2-Like game whose arcade mode actually confirms that you are a player in an online game. I think that its where players fit in the most cause its true. Though its just a shooting Deathmatch Game/Capture the Ball/Teamwork against 1 "Virus inflicted" player/Arcade mode teamwork.

so far it looks like FFXIV will have the same feel. At least it did for me during OB even with half the content missing.
REALLY hoping GW2, Rift and SWTOR bring some awesome immersiveness. Based on videos alone, GW2 seems to be doing just that. Followed by Rift. I want to say SWTOR is as well, but currently the graphics are too "bright" and are making it more WoW like, which isn't bad, but it isn't extremely immersive either.
So far every next gen MMO i have played lacks any sort of life of its own. They are mostly all hollow because they have taken out every aspect of the games that is of the most minor inconvenience. Most games are just arcade style now.

Fallout and Elder Scroll series for single player games.
Darkfall Online for MMO games by far and here is why:

- Realistic feeling combat, not to mention the funnest and most challenging. Bunny-hop physics are fun as hell!
- Biggest hand-crafted no-instanced world without invisible walls. The world is so big that I have been playing for 18 months and still have not seen several dungeons and content and cities out in the world.
- Player-made holdings and political warfare, sieges, naval combat, and mounted combat.http://www.youtube.com/watch?v=xQdIipvn55g
- No level limits or quest-chains that I am forced to do.
- Sound is extremely important in this game. You have to be able to hear what is around you or you will be in trouble.
- Full-loot so it matters when you die. You will get a huge adrenaline rush at times since the PVP is not very often. No safe-zones.
- Just like in real life you have to find a place to live and find a way to earn an income.

I'd be sold if it was group oriented but i'm guessing it isn't simply because almost no games are now. Meaning there should ALWAYS be groups available, they may not need your class at the moment but there should be some looking for something. It's sad when I goto the LFG tool in EQ2 and there is not a single group of any level looking for people.

Have to agree with Sid, clearly its Darkfall.
Playing: Darkfall New Dawn (and planning to play Fallout 76)
Favourite games have included: UO, Lineage2, Darkfall, Lotro, Baldur's Gate, SSX, FF7 and yes the original Wizardry on an Apple IIe
EVE, SWG, Ryzom, Ultima Online, Darkfall to a extent , and Star Quest Online. 6 games I could really do whatever I want when I want, only problems I had with the games in particular, EVE-no ground game (which will be remedied soon along with avatars) SWG -ruined by not fixing their bugs and lack of content in the Pre-CU version, CU hit they made it where any moron could work on a jedi with the Village content dubbed (Jedi Factory) along with adding in levels and the horrible Rage Of The Wookies expansion, and the worst thing that killed SWG was the NGE for a company thinking the orginal playerbase could be replaced by the WOW fanbois they were wrong and most of the playerbase quit giving SOE the big middle finger on the way out, along with making Jedi and erasing most of the 32 professions and dumbing down the gamem Ultima Online was ruined with the introduction of Trammel, Darkfall was ruined by hackers and exploits in the game, and Star Quest well the game is pretty great but they need a new engine overhaul or a new one and rerelease the game.
All the games all great immersive but the flaws are there for anyone to see if the problems were addressed I think I would probably be paying for 6 subs at one time instead of 1 atm.
