How customizable are characters are creation or is this even an option?  Do we have to play one of the two characters listed on the website?

You have to play one of those two characters, but they're really more like classes.  They're gender locked - the dual swordsman is male, the shielder is female.  You get to customize the usual appearance elements: face / hair style & colour / eye colour, skin tone, eyebrows (!), height, chest size (female).  It looks like you can earn makeup and tattoos or something later during the game.  It's about average, for free to play it's probably above average.

You can see your look in various clothing but will start in generic newb gear.  From the wiki it looks like you can unlock additional styles of underwear(!) later.

2 Classes with specific gender is not above average in any world, no matter how you can customize them.

Lets hope they fix this up later.

The character select screen shows 2 empty slots and one female character coming soon.

    As is, "not very"

You can change your eyebrows, hair and the color of the skin and hair (also height), but all the real options aren't there at startup (like makeup/tattoos/etc), and the avatar customization window is disabled atm. I'm guessing you'll have to buy the good stuff with NX at some point.
