My problems with the last FF was a UI that just didn't feel like a keyboard friendly one, and I couldn't solo at all.

Imo, it's even more complicated mechanic wise than FFXI. Click on the target, then lock on the target, then cast/attack. If you want to kite, you have to unclick once to "free" your movement (instead of circling around the mob) and you can put distance between you and the mob. Once separated you have to re-lock back onto the mob to cast.
FFXI you could cast on the mob while facing away but not here. If that was the only thing holding you from playing FFXI, you probably won't like it much either. But I think you still can try the beta and see if you like it before the 19th.
Personally, I've already adjusted so it's no big deal now. I'm used to doing it as well as learned how to fight toe/toe with a mob as a caster (Conjurer). Don't really die all the much though.
The game itself is good, but the controls will take a fair amount of 're-learning' for most MMO players from other games.
edit: speaking as a caster, not a melee.

It is definitely solable, at least early on. I havent gotten past level 10, but every guildleve so far (think open world private quests) has had a solo option.
The UI is pretty damn clunky...atm, combat takes way to many keys.
Click your target.
Lock your target.
Press your ability.
Confirm your ability on target.
Ability Fires.
Rinse and repeat.
Thats 5 steps to initate combat, that really should be streamlined to 2 - 3 max. However, its pretty much like any final fantasy game you everplayed. You will constantly get flashbacks from controler play.
That being said, it definitely is playable with a PC, the mouse isnt as bad as I expected, however, I am on a very high end pc so mileage may vary.
It will take you a good couple of hours to get the UI down, and every sitting for a week or so is going to feel strained for the first few combats till your muscle memory resets.
The game is absolutely gorgeous though, runs very well, and other than having a nasty learning curve and a rather poor intro that relys on you finding outside sources to answer most questions or simple trial and error till you figure it out, its a good game.
Still not sure if Im picking it up or not yet... need to learn a bit more.
Or you guys could just double enter...
or F then Enter. C to lock on if you want.. but I find that I auto-lock on if I tap enter again to automatically use my first attack.
After I'm done killing it I can just click Esc if the monster is going through it's dying animations and turn and click for the next monster or simply tab.

From what I have played, going solo is not a problem.
However, playing the game with the current UI is a huge problem and a big turn-off for me.
If what was explained to you before is your idea of fun and engaging combat, then you will like this game. If you are
one that likes intelligent, streamlined and fun combat design, you should look elsewhere.
This makes it slightly more difficult until someone gets used to double clicking or hitting F, then Enter which is still two motions to do one cast or attack.
FFXI was only 1 click (if I remember properly) and didn't have to be locked. Most other MMOs are this was as well which gives it that uncomfortable feel.

Although my character reached physical level 20, I mostly got there by taking all the classes up to rank 10 to get a feel for them, so I really can't say if this will work out the same at higher levels...
...but, at least up to level 10, soloability is very viable, and this is partly because the cross-class skills you can equip via the armoury system allow you to eliminate much weaknesses your charcter might have.
For example:
I had a conjuror and took him up to level 5 or so, and got Cure.
I switched over to a Pugilist and was able to use Cure to get some hitpoints back via expending MP when a battle went badly.
I switched over to a Gladiator and was now able to use Cure from my Conjuror and Second Wind from my Pugilist (which uses TP instead of MP) to get my hitpoints back if a battle is going sour.
I switched over to a Lancer and was now able to use Cure from my Conjuror, Second Wind from my Pugilist, and Rampart from my Gladiator (a panic button that temporarily greatly reduces incoming damage) to help my survivability.
Of course, there's a definate limit in play based off of ability points, and if the monster difficulty curve picks up it may well be that soloing is quite hard at level 20. I guess we'll see.
I think after you have clicked enter once on a mob, so you can see the difficulty and hp, etc you can just click 1, 2, etc and it will do all that for you. At least that is how it works for melee, it might work differently for casters. I haven't played any magic classes.

Dodos are OP. Nerf dodos. I hate the level 10 leve in Ul'dah where you have to kill groups of Stray Dodos. Un-possible alone, heheh. Otherwise good. Sometimes die doing level 10 leves.. at level 16.. but they're supposed to be level 10-20 leves technically I think, so.. okay...

There are a couple of ways to attack. Some using macros, some doing the Enter key a couple times with number keys, some doing it your way with F and such. Some clicking the sword icon at lower right. Oy.
Basically, this is what I was getting at. It's pretty complicated when it should kind of be simplier but it was set up for the console. If people understand that going in, they won't be disappointed if trying to be a caster/kiter.

Dodos are ok if you have a heal or two (blood rage+sacrifice works for me)
Also if you are a caster use /aoe to get both birds at once (The stray dodos)
Drop the next-gen marketing and people will argue if the game itself has merit.
I don't know if that means it's complicated it just means there are many ways to do things. Like there are many ways to throw a ball, some of them harder to do than others. But everyone is able to throw a ball... okay maybe not if they don't have hands... But you get my point.

Umm, you know you dont have to be locked onto the mob to attack, whether you're melee or mage does not matter.
You just have to have it targeted like in every other MMO, no need to lock if you dont want to
And you can also turn auto-lock on or off in the config menu in game
Solo yes, but it isn't a game that you want to solo. Your rewards are greatly increased with a group.

While I'm not denying that there are multiple key presses required for certain actions, the rather disingenuous - or at least incomplete - way it's described in some posts really irks me.
I do the same as you, masked... If I'm dong a leve where I have multiple targets on me, I'm off the current one and on to the next as soon as I see the mob is going to die. Esc, tab, enter... attack next target... wash, rinse, repeat. The entire process takes, maybe 2 seconds if that.
To read some people's posts, you'd think it's this long, drawn out affair where you're standing there doing nothing for extended periods of time as you cycle through key/button presses... which it most certainly isnt'. In fact, once you're familiar with the interface and learned the progression of combat well enough, you can anticipate each step and be right on top of it without hardly any delay in-between, outside of animations that have to play out, perhaps.
To put it another way, I think there's a number of people who are grossly overstating the situation.
