Honestly conjurers/thaumaturges are the best classes for soloing as their powerful healing spells allow them to easily tank most enemies as long as their MP does not run out.
It is hard to say having only seen the early parts of the game but my impression so far is that they have attempted, quite sucessfully, to strongly encourage group play while making solo play workable. This one liner is the point entirely for solo play in FFXIV. If you are trying to play this game as a single class you are gimping yourself from the gate out. Its the wrong way to play it, period. You can solo anything fine as long as your build your skills up right. Let me give you an example, here is my favorite 'solo class' to play so far.
Marauder Axe in hand:
1. Light Swing (Marauder default)
2. Concussive Blow (Pugalist lvl 2) for accuracy debuff
3. Skewer (Lancer lvl 2) for attack power buff
4. Skull Sunder (Marauder lvl 8) for DoT
5. Cure (Conjurer level 4) Heal - spammable if I need it, hardly used except in emergencies
6. Bloodbath (Marauder lvl 6) Heal
7. Second Wind (Pugalist lvl 6) Heal
8. Stoneskin (Conjurer lvl 6) Buff
With using MP only for the occasional Stoneskin and Cure, I have very little downtime (alternating Bloodbath and Second Wind as they come up). Concussive Blow stacks 3 times, and works wonders on damage reduction. But you can see, even though I have Marauder as my main weapon in hand, I'm only using 2 (besides the default) more skills from that tree. I have 2 other builds for my 'marauder' main hand, one for group play and another for AoE solo. A simple macro click and I'm changed around for whatever I am doing at the time.

This game will likely be less soloable overall than any other major MMO to date (except Final Fantasy XI). No one knows for sure how soloable it will be 20+, but based on Final Fantasy 11 and what I've played to rank 10 in a few classes, this game is just not meant to be soloed.
Actually, I'm going to say that even if you only stick to one class, you can still solo in this game. Granted, it won't be as easy as it would if you had all the supporting abilities and higher physical level from raising the other ranks, but it's doable.
This is in stark contrast to Final Fantasy XI, where it's suicide for most classes to try to solo in the majority of scenarios.
Lets say you're a casual player who can't be bothered to find a group, ever. No problem, just go do some lower level, trivial guildleves. You'll get plenty of xp thanks to the guildleve bonus, and they should last through the two hours you might have budgeted for the day.

I would say if you build a class focused on solo gameplay you would be able to exp solo all the way without problems.
