I find the PvP server the only way to play. But that's more what you like personal. On a PvP server you can be attacked much easier than on a normal server. A normal server is a PvE server with the option to go PvP.

Actually not really, you can PvP on both, what it boils down to is if you like to PvP by choice or not. Meaning on the Regular server you can turn your PvP flag on and off, on the PvP server you can't, you can be attacked at any time by any one as long as you're in a Contested or Enemy land.
So if you like the risk of never knowing when you might get attacked go PvP. If you like to PvP on your own terms go Regular. I will say the leveling will be a lot easier on a regular server.

I've been playing WoW since it's release.. I have some friends playing the game also - only 1 is playing pve and personally I don't even understand that. If you wanna get the fullest out of this game play on pvp. If you want to play against the odds play horde. If you want to play to lvl 60 - the most valuble lvl 60's are priest, warrior, mage... The rest of the classes are great but, those three are the holy trinity of this game just as EQ has warrior, priest, enchanter....
enjoy
Edit: if you decide to go pvp, want a valuble lvl 60 (to raid groups and stuff) I'd go priest or mage...warriors I think are the worst pvp - and if you pick the skillz to make a warrior good at pvp then he's worthless in a raid which you don't want... notice I didn't meantion rogues even though they too are valuble in raids, fun to play etc - this is due to an overflow of rogue players. They are way popular... I wouldn't want all the end game competition.
If you are a casual gamer and don't plan on making it to 60 anytime soon - then play whatever - they are all fun
Don't get me wrong, I play on a PvP server personally, so I wasn't promoting a Regular one, tho there are times lately where I wish I was on a regular server, but there are other times where I love it. I'm just now hitting that sucky level range where everything you do is in heavily contested areas and I get ganked quite regularily.

This is why I am quitting WoW - trying to raise a priest for the horde (lvl 30 - gorefiend). My problem is I played a hunter to lvl 60 which the game is flooded with and in the end game they aren't worth much in groups and raids - I hear in MC they are good but, whatever. Ok anyway so I have my priest - trying to lvl - do quests and what not. Alliance constantly ganking me. Then I get angry - login my hunter and stalk alliance till I feel better - which usually consists of me camping the gay alliance corpses till they are forced to spirit rez. The other day I camped 3 corpses - the 2 that were pickin on my priest and the reinforcements they tried to bring...pallies what a joke ---- I digress
Point being time sync - no lvl'n progress due to overwhelming alliance odds = no fun anymore.
Funny, I'm on Alliance and can't get squat done from always being ganked by Horde, goes both ways I guess.

Im not ganker myself in general but if they gank me ive np with it to:)
Like when im farming in eastern plauguelands runecloth on lvl58 to 60 mobs there near chapel becouse easy to kill and they drop 3 to 4 runecloth regulary hehe.
I see manytimes alliance there, when my plan is farm some rune and alliance come if they leave my mobs alone, not hunt near me, i dont bother attack them.
If they start attack my mobs im killing mode hehe:P
This is how i played most of my lvleling process to 60 i did pvp mostly end of my play day 1 hour or so and raids from time to time, but even on high pops server had not many problems been ganked by alliance, get back to my corpse and fight untill i had my revenge hehe.
If more then 1 i go do something else then.
Thats when you go on pvp server ganking is part of pvp you have to get use to it:P

you wont get ganked in your back when you are doing a quest.
