So I've played, with everything on low, and my fps is fine. Now, the responsiveness of the character is delayed about a second and when I enter a new area, character models take A LONG TIME to load. I hear them and all but I can't select/see them.
Anyone else experience this?
Do their servers have lag in general?
Is it just my computer?

This was normal a few days ago. It's likely something that will improve.
But yes, lag is common right now. Especially with the menus.
Because the game just launched yesterday, so there is an influx of new players, that might cause server lag.
Exact same thing happens to me. Crowded areas takes a very long time to load. Also all actions, skills or even interacting with NPC have delays on them. Been like that since the 22nd Sept.

...which makes me wonder why they didn't bother to have localized servers for NA and JP. I'm sure they could've very easily leased some US servers for the US players, rather than clumping everyone together.
That was one of the catch 22's for me in FFXI. Some of the best fun I had in that game was leveling with some JP parties. Those guys were crazy good at what they did - for the most part - and some of the conversations through the translator were hilarious and interesting. At the same time, ping in FFXI affected claims, so when competing for NM's, it was extremely difficult to pull one if against the JP players.
Of course, lag on actions and GUI were never really an issue in that game, even back then when I just had 56k at the point I first started playing.

So is your computer a decent computer? Because if its lag then I don't want to wait 5-10 minutes just for an npc to load so I can start a quest
I have a comp that can run the game on max settings minus occlusion. I also have a 15 meg fiber line and I frequently have to wait upwards of a minute for people or npcs to appear. What really sucks, is you only get SOME of the folks standing next to you. If you move, 40 people vanish, and 40 new people appear. Makes inviting folks a pain in the ass.
The really anoying thing, the uldah adv guild has a door that is based on your character, its kind of like the grocery store door. You walk up and it opens for you. But with lag..it doesnt always open. And since its individual per character, someone else cant open it for you. Its quite a regular occurance to stand at the door and walk back and forth over and over for 2-3 min waiting on the door to recognize you can actually open.
Now, all this is on a good computer.
My friend in florida, has a slightly older pc, he can still run the game well...but he definitely isnt on max. The other night, we were grouped and he couldnt even see us away from the camp. We had to direct him via ventrilo just so he could follow us around and kill mobs.
Good thing they did stress tests in beta...wait...
Good thing their servers dont lag with only 2k people on them...oh wait...
Im used to mmo's lagging with 5-10k people on, but FFXIV was horrific with as low as 1500 at CE launch. Hopefully they can fix this soon.
I have also noticed that lowering the graphical settings didn't change a damn thing on most PCs here at my house.
Even FPS stayed around the same regardless of settings :O
Proof? They do have a US office located in Los Angeles. They also have servers there. I know this because they did the same exact thing with FFXI. This is why they are able to release the game in 3 different countries!

It would be nice wouldn't it, but I doubt it will be. There is only so much traffic than can be sent over the undersea routes at one time and there is an inherant delay built in with the conversion from the US standard to the international standard on the pipes. Its not a great delay but another delay none the less. You at least have a decent ISP to the net on your end, but dont discount everything else along the way. Sure some of this is game dsign (characters popping in and out as you move), some of it is server lag (slow down when in high population areas in game), but some is infastructure (waiting for your door to open due to lag between host and client on location information). The first two can be fixed, the third one maybe not so much. There is only so much that is under thier control in Japan, from the US to Japan is not one of them.

I'm sorry, but I don't see any information regarding the underlined text above anywhere in the aforementioned link.
What I do see, however, is talk of globalization. That essentially means localizing the content for the areas they intend to service via translations and tweaks to the gameplay (last part being my assumption). Obviously, it could cover quite a bit, but the only relevant bit for FFXIV is translation given that the servers are currently integrated for Japan, NA, and EU (if I'm not mistaken). The only part of that article that covers anything server-related is the following:
"FINAL FANTASY XIV in mainland China will be operated from servers separate from those servers for the Japanese, North American and European markets."
What I take from that quote is that the Japanese, NA, and EU will all be sharing servers, while the Chinese will have their own cluster.
Of course, I could be completely mistaken, so if I am, please correct me! If I'm not, that means that everyone's currently playing via Japanese servers, and no matter where the servers are located, two groups of people will inevitably be left without local servers. Personally, I think that sucks, but maybe I'm alone in that opinion.

My Rig is custom made gaming system with i7 930, 6GB RAM, Win7 Pro 64bit, GTX480.. so yes I would say its a decent computer. It's also plugged directly into a 7mb line as I work online from home, not wireless, no extension cords. I don't have lag in any other game I currently play.

You are not mistaken. The reasone they do that is to keep RMT trade out, Chineese have their own servers so they are not allowed to play on the Japanese, EU, and American servers. That message was more of a calming message to all non-Chinese players that they are taking pre-emptive measures to combat RMT in FFXIV.
Just like FFXI, the servers are in Japan. I don't need proof I just used common sense but I challenge somone to prove me wrong.
Problem is that wont affect the RMT market at all. Lots of games have localized chinese servers and yet we have RMT. Lots of folks ban chinese ip's and they simply proxy around.
Short of large scale nuclear war I think RMT is going to be around for a while.
I don't know, I played Open beta for about a week, and on Kashaun I didn't see anywhere close to this amount of people. So I'm wondering if more people purchased it then they anticipated. Regardless, they need NA servers. This lag in 2010 is going to bleed subs from them if response time is like this for a couple weeks.
