I don't care how dated/generic the game is, I just want to play with a crowd that's generally friendly and literate. I'm tired of the silly elitism and all of the angsty twelve year olds (or angsty adults that act like twelve year olds).
When I first started playing MMORPGs, the demographic generally consisted of 20-30 year olds. In the past couple of years either these players have completely disappeared, or I've been playing the wrong games.

Everquest 2, hands down.
I have played the most of them out there and it is by far the best I have encountered. I think its because its a mature game and it attracts the adults.
Im not saying it because I am hooked on the game (I am but hey..). But I aswell look to the community as a very important point as to what mmo to play. All games have there share of morons, but EQ2 has the least (in my opinion).
I played the EQ2 free trial and was completely amazed at how nice and helpful people were in the newb grounds (especially in contrast to World of Warcraft which I was playing at the time). I didn't buy it due to my fiance's computer not meeting the requirements as well, but I think I may give it a shot again any way. Thanks.
Since you said that you don't care how dated the game is, I will suggest Everquest 1.
It has the best community, and probably is still the best game out there.
If you want a more modern game, then try EQ2, although the game is a bit disappointing, the community is decent.
speaking of community, I could suggest RYL: Path of the Emperor. it has large community that makes you satisfy playing the game. for me it's the best MMO game that I ever played.

They all have good community. If you look for a really good community, just take a good PVE game. Otherwise, the only good community PvP game is DaoC.
Ryzom's community is beautiful.

Personally my absolute top is Ultima Online and EVE.
I'll prolly get flamed for saying this, but the Vendetta Online community is by far the most mature, active, helpful community I've found in any MMORPG, ever. This includes devs and players.

I've played EQ, Shadowbane, DAoC, AO, Eve, SWG, Ryl, SoR and WoW so far. Got to say, I've seen much better, more mature communities in PvE than in PvP, even within the same game. RP servers also seem to attract more helpful, nicer folks, but you have to be into the RP aspects, too, since many of that population really don't appreciate non-RP on designated RP servers. As for the games themselves, the best community I've seen yet has been in Saga of Ryzom. There are good people playing almost any game, but in a lot of them you find a mixed bag, just like in real life. Take your time to find good guilds, then ignore the idiots.

i dont know the best and i may be wrong, but i dont play many mmoprgs as much, too many assholes spoil them or its too samey.
I play/played anarchy online, project entropia, runescape, darkspace, kal online, pristontale.
out of those is say anarchy online, someone helped me out of somewhere killing everything and giving me some cool stuff, like a new gun and tons of ammo, and some people have helped me get back when i got lost, early days... and one other good thing, no talks as much as you would expect. ypu dont need much help from someone, which means everyone can get on
The worst, project entropia, entropia pioneers, join and get flamed, everyone is so cocky, annoyed with eachother, for losing some may say "screw you little noob, im off to hunt some really big creatures and celebrate a hof with a party" "sorry i must go" "find out for yourself" sure maybe you should read the manual, yeah but its not all help, now you have to look for the towns, and teleports, people are un helpful, and selfish. I got of reasons, which is why i just talk to some people on it now and then. And dont get a mentor, if you decide to play it! i had a mentor and he just let me earn while he satback and waited, and my other one, wont get rid of me as a disciple, he just wants to earn things. Some mentors also ask for you to deposit, but then take you hunting and get you to do all the work and waste ammo, while they lose nothing.
the other ones are okay, people are assholes, but arent also as nice, just got make sure you dont run into them kind.
on the game im making, i put in a system to move players to a area, basically prison, for any abuse, which is in the middel of a desert, so abusers will still have fun. and dont worry, you get a fair trial.
Actually, I moninate Jumpgate for the best tight knit community. Eventhough the online players are a bit low.
I mean some new person has played the game in Jumpgate and has never been told "stfu noob" ever.
They somewhat have a newbie friendly website called Joystick Required so if anyone else has a question to ask about it before overlooking it.

Anyone who has played the game can back me up. The age ranges from 18-60 and yes, there are many 60 year old players. Cussing in the game's chat will probably get you shot with "Watch your language" since the community is just that mature.

Asheron's Call (now that botting has had its legs cut off) and AC2 have had the most mature communities that I've experienced. EQ2 was ok, WoW is horrible (unless you find a good laid back guild that you can get along with to play solely with but even then you're subjected to idiots using language like the "N" word in open chat because someone happens to be fishing in the same place as them).
If you TRULY don't care about how dated the game is, how about something like Dragonrealms or Gemstone III (Text-based RPGs that still have very sophisticated systems, moreso than what you find in the graphic-based games).
Overall, a game is about the people with whom you play it, which is why the guild system has been such a fantastic addition to the genre. You can turn off general chat and merely hunt/quest with friends.
