I'm going with May 25th, 2011 to coincide with the original release date of 'A New Hope' back in '77.
Do I have an ounce of proof..HELL NO, but it's fun to speculate.

I have no way of proving it either, but if the Spring release time frame does not get changed I would say late may to early June would be a good bet.

EA has a habit of releasing it big titles in September and this will be no different.

My best guesstimate of release date will probably be Summer of 2012.
Its a huge title and Bioware/EA have a lot riding on it, so my guess is they won't release until their sure its working as it should - after seeing what happened to Squenix my guess is that they know that it doesnt matter how well known a company is, unless the game really is solid, it will fail.. and whether i like the game or not, one thing i do expect from Bioware is a game thats solid once it hits the shops etc. no releasing any betafails...
I reckon late may/early june, its far enough away from cata that thats gone a bit dead again, and its far enough away from blizcon in october, when they'll probably announce their new mmo to steal some of the old republic/guild wars 2 thunder. Either way, I reckon if its coming in the sumer, we'll find out next week at pax.

Summer months. Usually the way these things go is the game gets pushed back because of kinks or whatever. Bioware seems to be on the ball so I'll predict this only happening once.

The day it releases!
I've been saying May as well for sometime now. Most of the Star Wars movies have been released in May starting, like the OP pointed, out with episode IV; so I think if it's in anyway possible they'll shoot for a May release.
Those speculating dates in 2012 apparently haven't gotten the memo that Bioware and EA both have confirmed it will be released this year, and in my opinion they'll hold to that whether it's ready or not. But I think they'll be ready.
