1. Well, you can only pick the "Souls" from your very own calling, not from others. So yes you will only be able to do warrior souls if you pick warrior. Mage ones for mage.
2. Doesn't matter, really. Just pick which one looks cooler to you? Racial bonuses play a very small part in the game now that you can't use them in the instances/warfronts anymore.

I'm a little partial to Eth in general. Bahmi has the cool jump and Eth has the cool speedboost whereas Kelari has a cool looking and completely worthless ghost fox thing. Really, though, races are pretty insignificant and Bahmi does scream "warrior" as was mentioned.
I was pleasantly surprised when I went from Apprentice to full 5 star Elite in under 2 months. I was pleasantly surprised again when I went from Elite to just barely Hardcore in 2 weeks. Apprentice, here I come!
dwarves have the coolest buffs of em all! I can jump off cliffs that'd kill most lol.. And it's came useful, i was being chased around out front of sanctum and simply jumped off this huge cliff, when the guy i was dueling chased me he died xD

Bahmi are the games big guys, strong on tradition, excellence and hospitality; they resemble nomadic peoples who several generations ago put down permanent roots in cities. The Kelari are slim Elven types, with maybe a hint of cat or fox in their features; they are a proud, spiritual people who are fond of ritual.

That Kelari fox transformation is useful when you want to avoid agroing mobs (or Guardians, if you spot them early enough). On my cleric soul I used it several times when I wanted to go somewhere without getting aggroed.

i like the bahmi racial that super jump i atleast use it to mess around unlike the kelari one thats not even on my tool bar its completely worthless
99% of the warrior characters you see they are bahmi so would be up to you,but bahmi does scream warrior so its hard not to roll one

Not really from what I can see.
In a way, clerics are like monks... They're healers, shamans, etc. mainly, but they have that whole peace thing to them.
