I search for a list of instances, and the best I get are lists updated 3 years ago.

Is there a 2011 list of dungeons, their player requirements and levels?

Far as I know, no. However, I have recently encouraged folks to start contributing to the AoC Wiki. It's gotten a little bit of traction so far. Hopefully we can get some more up-to-date information on the game out there.
