Which ones do you think would make the best combination for characters ?

no. The races differ in appearence, story, and in a number of racial skills that are supposedly slightly weaker than profession skills. The differeneces of the professions is not going to matter much except in cases of elite skills, which are more along the line of game changer skills meant to save you from complete disaster more than anything. Tactically, I think it is likely that the elites will be balanced among the races as will all the racial skills.

Perfect way to look at it. If you don't like how a certain profession plays, then try to play it differently. That's how they work in GW2. Racial skills don't have a big impact on how the normal classes are.
Arenanet has said that races will be balanced with every class combination to insure that even if your playing something that seems like an unlikely combo, you will not be gimped for doing so. I also understand that they have made mention of the racial skills being somewhat weak compared to similar class skills, but part of me has to wonder about that given some of the skills we are aware of that are racial. Skills like Turning into a giant werebear (Norn), or Summoning a power armor suit (asura), or 2 Demonic fiery hounds (human). These racial skills just sound damn impressive to my ears, at least on paper.
Elite Skills come in 2 types as mentioned already:
Racial Elites & Profession Elites
You get to slot 1 from the selection in both pools, available: A couple per category eg.
Elite Skills function as a super powerful skill. It has a very long cool-down to balance it. It adds a spectacularly graphical effect for your char and useful to get your char out of a sticky situation or take more control back in a PvE fight eg swarming mobs or boss fight etc.
In PvP it's use is about manipulating/changing the course of the fight (temporarily or decisively) and using it at the optimum time (ideally) after the other side has used their elites and cannot effectively avoid or counter yours or to grab some time to rally etc, and ideally for maximum effectiveness due to long cool-down and power.
Racial Elites should all be similar enough to each other but provide flavor for the races eg I prefer the Norn/Asura elites to the other 3 races which don't impress me as much. But I also like some of the prof elites more than others eg cyclone for ele is very cool.
Q: Not sure if Prof Elites will be more effective than Racial Elites? And also these skills may be modified difference in PvE vs PvP... tbc??
I think they will be balanced to be around the same in terms of power. It would be counter productive to have varying degrees of power between prof skills and racial skills. It would only mean that racial skills would be ignored in favor of prof skills.
Never forget though, that Blizzard too says that their racials don't / shouldn't matter for your class pick. Developers frequently underestimate the player's desire for efficiency
It's really difficult to make any kind of statement about racials atm. We just don't have enough information to see how they'll play out. That being said, the skills seem to have more to do with Lore, than synergy with specific professions.

Well, for example proffs have elite skills but races can too.
Elementalist has Tornado
Human has Hounds of balthazaar
Charr got land mines
So if i make Human Ele i can pick either Tornado for elite or Hounds of Baalthazaar
If i make Charr Ele i can get either Tornado or Land Mines

Rule of thumb is to "never take Blizzard for word - they don't keep it"
