The last profession will be mesmer. Based on the hints Anet have dropped it is a fact. The mechanics of the profession will differ from GW1 as the are no hexes in GW2 and interrupts play a less significant role. They have said though that it will revolve around mindtricks.
I'm sure the people at Arenanet could tell you what it is, but they won't until it's ready. Guesses are it will be the mesmer that was already in GW. The class uses illusions to weaken and defeat opponents. If you want a taste of the Mesmer you can always try the GW trial. How it will be adapted for GW2, for that we'll just have to wait and see.
Waiting for Guild Wars 2, and maybe SWTOR until that time...
It's almost impossible to be anything else than the Mesmer. There are hints of how it plays in GW1 but it's quite a different game so how it will turn out exactly remains to be seen. You can read up on GW1's mesmer here:

You are mistaken. Interupts will play significant role. All stuns, knock backs, knock downs, lunches.. and some other skills and type of skills will be interupts as well. All proffesions have this skills and everyone will use them.

Actually, Leonona is correct. Developers have said that interrupts will be less important than they were in GW1. This isn't to say there won't be any interrupts at all, just that they won't turn the tide of battle as easily as they can in GW1 - especially for Mesmers.

Aye, I imagine skills like D-shot and Panic won't be in GW2. I mean they might be but from what we know it seems highly unlikely. Interrupts will be a secondary feature of a skill rather than a defining feature (like knockdowns, fear, etcetera).

I think they have a hard time giving the class the same feeling as the old class, espescially with the different mechanics in place.
And if the new mesmer plays differently, many people might be dissapointed, despite the fact that the class might be really fun to play.
Best MMO experiences : EQ(PvE), DAoC(PvP), WoW(total package) LOTRO (worldfeel) GW2 (Artstyle and animations and worlddesign) SWTOR (Story immersion) TSW (story) ESO (character advancement)
Human Queen is mesmer {and is in edge of destiny book}. So i think mesmer will be the class. Based on few hints i foresaw engineer like 2 months before announcement. Mesmer is just too obvious
the last class certainly will be mesmer, thats not the question, the question is: what will it be like, it will allmost certainly play different then the orriginal mesmer.

Whatever the class is, (we sort of know that it is a scholar class, but that could have changed) I hope that it isn't called Mesmer and plays totally different from the GW1 Mesmer. Just so we can enjoy the wailing and gnashing of teeth that will come about due to any deviation from that class that Mesmer fans have been theory-crafting in their imaginations for the past few years.

Which seems likely considering Anet explicitly stated that the last profession is a returning profession with the same name and considering the actual name mesmer is mentioned in both novels.

Why would you enjoy that? There is a reason why the mesmer has so many fans. It's one of the most unique professions in the genre and it would be a real shame to lose it. I'm also certain it's going to get a lot more fans, if Anet manages to make mesmers interesting as they are in GW1.
CDA: I think one of you promised players who had played the Mesmer in GW1, that in GW2 they would find a profession to fill their expectations. I'll ask this way, then: have we already seen the profession that meets their expectations?
EF: That's... a very interesting question. We have certainly seen a few professions that can fit some of their expectations, but I don't think we have seen the character that would best fit their expectations.

Looks like a Mesmer. It's also a Scholar (cloth) profession and a returning Guild Wars profession. There is little chance it will not be a Mesmer.
Okay so if what you posted is accurate, then it's basically confirmed that the last class will be mesmer. Or at least very mesmer-"like." I base this on two facts:
1. The site you posted said that the final profession will be one that is returning from GW1. That leaves: Monk, Mesmer, Dervish, Paragon, Ritualist, and Assassin as possibilities.
2. Another thread here has a quote from Eric Flannum where he states that the last profession will have the most to satisfy fans of the Mesmer in GW1.
So if the last profession is a returning one from GW1, and it will satisfy Mesmer fans more than any profession...I wonder what it will be ?

I think it's gonna be the mesmer, but im gonna play a guardian.

Eat me!
Who knows. IT might not be called Mesmer at all although i doubt it. Could be something like Illusionist or Dominator or something akin.
It will definitly do with mind magic.
Trickster?

Are you team Azeroth, team Tyria, or team Jacob?
I bloody well hope it's the Mesmer. I don't really care if it will play differently in GW2, it's the concept that is cool.
It is most likely mesmer everyone thinks it is. what else is possible?
