Is there a way to turn off click to move? This is driving me nuts.
What is the profession most likely to be played badly? I have been more into melee characers for awhile now but just looking at the warrior tells me there are a lot of them. I would rather play something a little more rare that people screw up a lot.
Is there any profession in high demand?

Warriors and Assassins tend to be played by bad players, Dervishes also to a lesser extent. Basically all more straight forward 'do damage' professions. That does not mean those professions are bad, but bad players just enjoy those professions more. The professions that are easiest to screw up are the Monk and the Mesmer, that's one reason why there are only few of those around.

I figured the mouse thing out after some messing around. I really don't like the camera in this game unless I missed it and there is a way to unlock my camera so I can move it but not my character.
I have messed around with a few characters so far. Warrior and Assassin look like they could be fun. Paragon lasted a few minutes because I just can't run around as the most girly man every. Reminded me of Reveng of the Nerds.
Trying out Ritualist but they kind of suck to start with. Probably give monk a try next and then pick my pression.
I like the sound of Ritualist and Mesmer the most.
Mesmer is one of the trickier professions to play. If you're looking for a challenge, that should offer you a decent one, especially if you focus on interrupts. It's probably the profession that is most reliant on the player's experience and knowledge of the game to be successful. Knowing your enemy is *very* important and requires that you really pay attention to what's happening around you so you can take advantage of your opponent's actions or mistakes.
I have a supreme Mesmer bias though so take that recommendation with this in mind.
Ritualist is a great profession. Great for farming. It can be a damager, support and healer. But as with any professions you need to get skills to see their true potential.
Choose monk if you like healing obviously, Ritualist for multiple roles I mentioned, Assassin for high dps and tanking (needs a lot of practice, theres so many bad assassins), Warrior for dps, tanking and some support, Mesmer if you like to mess with peoples head, it is the master of control, very tricky class, Paragorn for support, Necromancer for multiple roles, one of the best classes, they can do almost anything: healing, controling, supporting, damaging..., Elementalist - recommended class for begginers, multiple roles but mostly dps (fire, air), they can do healing and protecting (E/Mo), and good control (water) also tanking (earth), Dervish is for tanking and dps, needs practice, Ranger is for dps and control...

For your camera needs: If your character is standing still just hold the right mousebutton and move the mouse.
If you want to move the camera freely while moving with "wasd" you will need to assign a qualifier key. Press F11 and select the "Control" tab. Under "Actions" look for "Camera: Free camera" and assign a key. Still need to hold rightmouse + your new qualifier key.
Agree on the comments on mesmer: Very hard to play above average and really requires a solid knowledge of most skills in game. (A lot of work to be just a semi-decent pvp mesmer.)
Mesmers have seen a few buffs on the pve side and can enjoy that aspect of GW too. (i.e. no longer useless in pve).
We dont need casuals in our games!!! Errm... Well we DO need casuals to fund and populate our games - But the games should be all about "hardcore" because: We dont need casuals in our games!!!

Monk is alwayes on high demand, Rits are a dime a dozen tho.
IMHO my fav class is a dervish.. and despite what people belive they are realy REALY easy to mess up for pve or pvp.. They also take practice to master and once you know how to play them (and use thir skills effectivly in builds) they can be damn near indistructable. They can also do high burst damage, heal, support, buff pretty much anything but without the right gear/build you will get squashed. (<3 fail dervishes in FA, they tend to get steamrolled by my dervish)
To add to it i think the dervish have the best lokking elite armor in the game.. (primeval)
