In most modern simplified MMO's classes only get to stack one character stat and that character manages DPS and healing output... Simplified and easy... some stats are just a given.... casters are weak and die easilly....
I hope it will be possible in GW2 to build an Elementalist that has low to medium damage output, but is as sturdy and survivable as a tank....... Or a warrior that is quite squishy but has a lot of crowd controll and high DPS to overcome its foes....
I really hope the system will be enormously flexible, compared to the current one side systems we know from other MMO's...

It'll come down to traits which are going through a revision because there really isn't a "dump attibute" in GW2. You kinda want them all.

Power — increases attack
Precision — increases critical hit chance
Toughness — increases defense
Vitality — increases maximum health
The stat system appears to give this freedom. Although it remains to be seen how much of a factor stat bonuses from items distort this freedom. For example if crests primarily give bonuses to power and precision instead of toughness and vitality then this limits your freedom as a caster to be more resillient. Further more, professions differ (or at least, they did in some demo's) in their base attributes. A necromancer is naturally more resillient than the elementalist and a warrior is naturally more resillient than the guardian for example.
The trait system has been revised, not completely redone but still it's a bit early to judge it.
Yes, you can. This is what they've been talking about with all this "end-of-holy-trinity-roles". You can take your Elementalist and switch to fire for dps, or switch to earth for survability and cc, or water for support and cc...
Also depending on the weapons you get different skills, so you can take your Guardian with a great sword for high damage output, or switch to wand + shield for defense and protective skills...
And finally you have the traits so you can customize everything and play around until you find the combinations more suitable for your play style.
And you will be switching weapons a lot, depending on the strategy required for each situation.
