So I think I will be rolling Jedi Knight, but I really wanted Vette as my first companion. Can't happen? If I want to really see the romance arcs I better pick a male character? Will Jedi Knight ever get Vette as a companion? If not, then where does the romance story element come in?

Vette is not the only female companion. I don't get what you are asking.
Also, there are romances with NPC's that aren't your companions.

Each class has separate companions, you can't get Vette as a JK, she's only for SW.
As a JK your first companion will be a droid, then Kira (romanceable for males and pretty cool), then later Doc (romanceable for females) and 2 other (non-romanceable i think) dudes later on.
Well, I happend to be really digging her, but I was going to go for jedi knight.

Each starting class has its own unique set of companions.
As for the rest of your question... not sure what you're asking. Are you asking of you have to have a male character to enjoy romance plots? Probably not.

Every character will pick up a number of companions. Vette is a companion for the Sith Warrior, not on the Republic side.
I can't see any reason to expect that picking a male character will provide more opportunities for romance. Excluding droids (oh and wookies :-) ) thare are more than 2 male companions to every female companion. Playing the odd's, you could say that playing a female character may give you a better chance for a romance story line! I'm sure BW will not prevent same sex romances however.
The romance will likely come in as part of the regular companion interraction elements that occur as you level and based on the 'favour' rating you build with the companion.

Every class gets a male and a female companion(s.. some get multiple) that can be romanced. However you can only romance the opposite sex at the moment so if you play a male, you can romance the romancable female companion and vice versa.

Someone above said we'd be able to romance with NPC's too. Is that correct? But I get the feeling NPC's romance will not be as fun as the companion, because they are with you all the time.

I don't think it's actual "romance", but there are some options to flirt/kiss etc in dialogs. I didn't see one that turned into anything resembling a proper romance.
This is mean, why male characters get only 1 possible romance companion but for female 2?
I mean.. Majority of players here probz are males and i dont think that i want to see myself roleplaying as women and romancing a man .... it's just wrong ....
Point of order, RL is a much better place to work on leveling up your romance skills, but I suppose this could be sort of a training ground for the real thing.

Most classes have 1 male and 1 female romance options. Some get 1 extra option for one of the genders, and only sith warriors (i think) get 2 each.
I suppose bioware put romance options where they fit into the story, and not to keep it balanced between classes / genders.
Yes, also RL would be a better place to work on world domination, or rooting out all evil from our universe. Lets just drop all this gaming nonsense and come up with how to build working light sabers and blasters IRL
Yes, there are ....encounters...throughout most storylines - For instance, Smugglers get it on on Nar Shadaa - although you nicely get to insult her afterwards
